Thank you for bearing with me as I switched hosts yesterday. The last time I moved to a new host, I didn’t turn off comments and it was a complete disaster, so this time I disabled them for 24 hours. I guess maybe I should have announced that beforehand, but I tend to be better at hindsight than foresight. Oops. Anyway! I am switched over and things should run a bit more smoothly around here now.
Here’s what I ate this week:
Indian Pizza with Roasted Cauliflower // You know how I’m always going on about those jarred curry sauces, right? This is one of my favorite uses for them–pizza! I shared my recipe over on Food Fanatic, so be sure to hop over there and check it out.
Skinny Spaghetti Squash Alfredo from Food Doodles // This photo is the result of me rushing to get a picture taken before the sun set completely. (Is it summer yet?!) But nevermind that, this recipe is amazing. I had to keep reminding myself that it was skinny because it definitely did not taste it.
Toasted Asiago Crackers + Tomato & Basil Hummus Dip // My go-to snack for the week. This hummus makes a great spread for sandwiches and burgers too. I always have to buy a container of it whenever we go to Trader Joe’s.
Chocolate Peanut Butter & Coconut Cups from The Vegan Chickpea and Smoked Paprika Salt & Almond Cups // I’m not really into Valentine’s Day, but when I saw the recipe for these peanut butter cups, I thought I’d make them for my husband, who loves all things peanut butter and coconut. And I may have snuck one myself too and as expected, it was delicious. I also made Smoked Paprika Salt & Almond Cups, inspired by this Pecan Chocolates recipe on Chasing Delicious. Neither of these turned out as pretty as the original recipes, which is why I am a cook and not a chocolatier!
Barbecue Tofu with Pineapple & Mango from Averie Cooks // Okay, I didn’t use mango (it is impossible to find decent mangoes right now!), but I did have pineapple on hand so I just doubled the amount of it. I am head over heels in love with this recipe.
Natural Calm + Clementines // Another afternoon snack I’ve been having this week. We went to Trader Joe’s last weekend and I bought a huge bag of clementines there so I’ve been eating a few a day. And then Natural Vitality sent me some samples of their Natural Calm drink mixes, which I’ve been having once a day too. I’m a big believer in magnesium supplements because as much as I try to eat foods high in magnesium, I don’t always succeed. I had been doing pills, but the Natural Calm drinks are pretty tasty, so I think I’ll be switching to them.
Crispy Curried Potatoes from Hungry Couple // I made a few adaptations to this because we had huge Yukon Gold potatoes and not small red creamer potatoes and we didn’t have chives, but these were fragrant (seriously, the whole house smelled so good when these were baking!), crispy, and delicious.
Matzo Ball Soup from Betty Goes Vegan // I don’t have a picture of the soup, but here are the matzo balls! The thing about going veg at a young age is that there are so many meat-based dishes that I’ve never had the opportunity to try–matzo ball soup being one of them. Well, now I can finally say that I’ve tried it! And it was really good! Total comfort food.
Pesto Tortellini Bowl from Trader Joe’s // So we can agree that this is totally the Amy’s Pesto Tortellini in a Trader Joe’s box, right?
Maple Miso Tofu Sandwiches with Curried Cabbage // I froze the leftover sauce from the last batch of Maple Miso Tofu that I made and used it to make another batch this week. Then I used some leftover cabbage that I had from another recipe to make another pot of Curried Cabbage. And lo, I made sandwiches! I realize that tofu & cabbage sandwiches with a green smoothie on the side is basically every bad stereotype about vegetarian food rolled into one meal, but this made an awesome lunch.

That pizza looks very good. I also love clementines but haven’t found any good ones in the stores here yet. I have bought a couple of bad bags in my lifetime and I don’t want to do that again!
I have had some bad clementine experiences too lately! The ones I bought at Trader Joe’s were perfect, though. But yeah, I’ve also ended up with big bags full of tough, seed-filled clementines.

I went to high school in South Africa where there was a huge Indian population. I still have friends there who keep me well supplied in amazing curry powder. It is my weakness.
I’m going to have to look into that Nature’s Calm. I take Magnesium, but I’m not very good at being consistent. This might be a good thing to switch to. Thanks.
Natural Calm is such a lifesaver for me! When I can’t sleep, I have some and then I get an amazing nights rest. Those peanut butter cups looks amazing. I have been eating way too much chocolate though. Sigh.
Your Indian pizza looks amazing – I looove those jars too but would never have thought of pizza. And nothing says love like peanut butter and coconut!
