Pumpkin pie, pumpkin bread, pumpkin muffins, pumpkin spice everything. Once fall arrives, sweet pumpkin recipes are everywhere you look. But some of our very favorite ways to cook with pumpkin don't involve a single pinch of cinnamon sugar.
On its own, pumpkin is only mildly sweet, which makes it a surprisingly good team player in savory cooking. Roast it and the edges caramelize. Blend it and it turns into a silky base for soups and pasta sauces, no heavy cream needed. Fold it into risotto, bake it into flaky pastry, or tuck it under a golden layer of crispy tater tots, and it adds color, body and a little extra nutrition to every bite.

Tips for Cooking with Savory Pumpkin
- Pick the right pumpkin. For roasting, stuffing and cubing, reach for small sugar or pie pumpkins, butternut squash (called butternut pumpkin in Australia), kabocha or red kuri. Big jack-o'-lantern pumpkins are watery and bland, so save those for carving.
- Canned is completely fine. Many of these recipes start with plain canned pumpkin. Just check that the label says 100% pumpkin, not pumpkin pie filling, which is already sweetened and spiced. Or make your own homemade pumpkin puree and freeze it in recipe-sized portions.
- Roast a big batch. A tray of roasted pumpkin cubes keeps for about four days in the fridge and can go into salads, grain bowls, pasta and soup all week long. (Our guide to roasting butternut squash works for any firm pumpkin.)
- Lean on bold flavors. Sage, rosemary, thyme, garlic, harissa, curry, miso, chili and sharp cheese all bring out pumpkin's savory side and keep it from tasting like dessert.

At first I thought it was stuffed tomatoes but when I looked closely I was amazed. It's very creative. I remember at school in cooking classes I learned how to make stuffed vegetables but it was mainstream, gratin and potatoes or tomatoes. Here in Mauritius we don't get small pumpkins like you have used. By the way I don't eat mushroom, what would you recommend as substitute? Your blog is very lively and inspiring. What's most interesting and eye-catching is that your blog has varieties from drinks, sweets, snacks. Your blog is a total package 🙂
