So many great ideas here, but I have to place a shout out for a recipe from the Greens Cookbook that I have been making since 1994. It is the Carmelized onion, Goat Cheese and Sage frittata. It is topped with a balsamic vinegar reduction. It is an elegant crowd-pleaser at brunch. Haven't tried making it vegan, but I might add a potato instead or serve cashew cheese on the side.
