I always tell people that I don't miss eating meat and it's true, but there are still some favorite dishes from childhood that I find myself craving now and then. I love this post! It's such a great resource...I can tell already I'm going to be spending my working morning looking at all of these recipes (oops!). And you're right - I don't actually miss the meat either... I just miss the dish in general and sometimes feel too lazy to figure out a vegetarian re-make. This is a good go-to list!

When I first stopped eating meat, I ate all those processed meat substitutes, which made recipe remakes easy--replace chicken with fake chicken, replace beef with fake beef. It's a lot more complicated when you're using real food!

Great post idea! Even though I'm not vegetarian, I can't think of a dish that I absolutely must have the meat-version of .. I usually like the idea and overall flavour profile of a dish, and it is usually just as good without the meat!

What a fabulous bunch of remade dishes! That pulled squash sandwich looks like the real thing! As you well know from looking at this list, a lot of the flavor is in the seasoning and not necessarily in the meat. I make a black bean chili that I prefer over the meat chili, but that's the only "classic" that I do that I can think of. Great recipes!

Yup, I think more than flavor, a lot of the times it's the texture that you can't really replicate. And since I hate the texture of meat, that's not a problem for me. 🙂
