Double check that you are using pure maple syrup. The ingredients list should say 100% maple syrup. This will give your vegan caramel sauce the best flavor. Of course, you could use one that has fructose in it or maple flavor. However, these kinds of "maple syrups" don't contain as much pure maple syrup and will be higher in sugar.
