Many of these look yummy but they are NOT vegetarian if they have chicken stock in the recipe. Luckily that's an easy substitution but never the less it's misleading and certainly a vegetable stock will change the taste.

I'm really careful when curating these round-ups; I only included recipes that either call for vegetable broth/stock or specifically say in the ingredients "chicken or vegetable stock" (because obviously, any vegetarian making the recipe will opt for vegetable stock). If you're seeing a recipe where the ingredients only say chicken or beef stock, please let me know because I'll delete it from the list.

Perfect timing for a soup round up. It has been below 0 for nearly a week and today we are finally hitting 30 degrees in Denver and that feels comfortable all of the sudden! Looks like the east coast has had its share of cold too-- stay warm!

Hooray for soups! These all look fabulous! That creamy wild rice and mushroom soup is just what I've been searching for. I recently made a creamy mushroom soup for company - complete with half a pint of heavy cream! Everyone loved it but it's not going in the weekly recipe rotation. 😉

Yeah, the sour cream makes a great substitute for heavy cream! A few people have mentioned using Greek yogurt instead too. 🙂

Since it's cooled down to all of 80 degrees this winter in South FLA, I'm all about the soup! ha ha. I'm waiting and waiting for the cooler temps that we usually have at this time of year so that I can enjoy soup every night, and when it does cool off, this will be my go to list!
BTW I'm not really complaining, I'm grateful to not be digging out my driveway and sidewalks!

Thanks for this delicious roundup! I absolutely love your Chard Lentil and Potato soup---I have made it multiple times, plus made variations using spinach or kale, sweet potato and squash!
