    Penne with Butternut Squash & Kale

    Penne with Butternut Squash & Kale
    Yesterday I posted the first part of my collaboration with Rikki Snyder, a Butternut Squash & Caramelized Onion Flatbread. Today is the second part of the collaboration. It's an easy fall pasta dish--like the flatbread, you'll be using roasted butternut squash and caramelized onions in it, along with kale and Pecorino cheese. With the onions and squash cooked in advance, the pasta only takes a few minutes to prepare.
