Penne with Butternut Squash & Kale
Yesterday I posted the first part of my collaboration with Rikki Snyder, a Butternut Squash & Caramelized Onion Flatbread. Today is the second part of the collaboration. It’s an easy fall pasta dish–like the flatbread, you’ll be using roasted butternut squash and caramelized onions in it, along with kale and Pecorino cheese. With the onions and squash cooked in advance, the pasta only takes a few minutes to prepare.

    Even though I’ve totally drank the Pumpkin Kool-aid, I love that you made a fall recipe that doesn’t have any pumpkin. I kind of need a break.

    I just discovered your blog yesterday- loving all the recipes I’m finding! It’s nice to find a healthy/vegetarian blog that isn’t preachy 🙂

    And I’m with everyone else on this post. The photos are gorgeous (will have to pop over to Rikki’s and tell her!) and I am now in search of a bowl just like that wooden one!
