    Coconut Mango Overnight Oatmeal

    Overnight oatmeal in a jar is the easiest breakfast ever! This vegan Coconut Mango Overnight Oatmeal recipe is both delicious and healthy.

    Mango Season

    Despite having lived in the tropics, I can't really tell you when mango season is. But I do know that a few times a year, there's suddenly an abundance of champagne mangoes at the grocery store.

    They'll be strategically positioned at the front of the produce section, boxes stacked precariously on top of each other. And they're always 5 for $5.

    While I like regular mangoes just fine, I like the champagne ones even more. They're a little bit smaller, but I have yet to get one that wasn't sweet or that was stringy or weird in some other way.

    So, in summary, I love champagne mangoes and it's that time of year- cheap champagne mango season!

    About the Recipe

    I've been trying out different kinds of overnight oatmeal lately, but I haven't had success until I came up with this Coconut Mango Overnight Oatmeal recipe.

    The first time I made overnight oatmeal in a jar, I tried using steel cut oats. I've read other people raving about using those in overnight oats, but I have TMJ and chewing on them gave me a jaw ache that stayed with me the rest of the day. Not good!

    I also tried adding cocoa powder to my oats, but that was not my jam- I had to let my husband finish that batch of oatmeal.

    After purchasing a bunch of cheap champagne mangoes last week, I thought I'd try overnight oatmeal one more time, with mangoes and coconut. And if it didn't work out, I would stop trying to make this overnight oatmeal thing happen for me.

    Well, I guess it's true that the third time's the charm, because the Coconut Mango Overnight Oatmeal was definitely a winner.

    I find oatmeal to be a little bit heavy, so adding an equal amount of mangoes to the oats was the perfect way to lighten it up.

    And the best thing about overnight oats is that you do the (minimal) prep work the night before and your oatmeal is done in the morning. You don't even have to heat it up (although you can if you want)!

    I've been making this with my cheapo mangoes all week and I don't think I'm going to get tired of it anytime soon.

    Ingredients

    • ½ cup rolled oats
    • ½ cup unsweetened almond milk
    • ½ cup mango diced
    • 1 tbsp shredded coconut
    • 1 ½ tbsp agave nectar
    US Customary - Metric

    Instructions

    • Stir together all ingredients in a resealable jar or bowl.
    • Cover and refrigerate overnight.
    • Stir before serving and add additional milk (for a thinner consistency) and agave nectar if desired.

    Notes

    Prep time doesn't include time spent overnight in fridge. You can substitute any kind of milk for the almond milk, but you may need to adjust the amount of agave nectar you use. If you don't keep agave nectar on hand, brown sugar or honey would both work well in this recipe.

      I made this last night with soy milk and sultanas, I just had it for breakfast and I loved it. Having made Bircher muesli before I wasn't keen on the fruitiness from the apple juice but I will be experimenting with you recipe with different fruits. Thank you

          Frozen mangoes work great. Love, love, love this recipe! I make a triple batch and have it through the week. I also add a little ground flax. Maybe 1T.

      Sounds MARVELOUS. I'll do it. Why the Resealable container? does it need mega-sealing for it to 'process' overnight? if so, what else could I use to secure it so?

        Nope, you just need any container with a lid, but if you don't have that, a little foil or plastic wrap will do--I don't like to put things in the fridge for that long without covering them. 🙂

      Wow, just made this tonight and took a little bite- delicious. Hassle free to make, and makes a hassle free morning. One thing that I added and recommend if anyone is obsessed with these like me- Chia Seeds!! I put about 1 and 1/2 TBSP in with this recipe and it made the consistency very nice. Thank you for this simple and tasty recipe!

        They're Weck canning jars. I bought mine at Crate & Barrel, but I know they also sell them at Williams-Sonoma. You can order them on Amazon too, but I think you have to buy a set of them when you order from there. So glad you like the recipe! 😀

      thanks for your comment on the TMJ, I had the same problem. Mangos are my fav fruit, so I always have a couple of cans of mangos in the pantry for when they are not fresh(better than going without, I figure). They are difficult to find. I will definitely have to try this combination, sounds good. Instead of adding agave to my oats, I just add some of the juice from the can of fruit.

      I tried this recipe last night and had it for breakfast this morning. It was so good! I was pleasantly surprised by how good it was with so few ingredients. I used frozen mango ( I microwaved it before using it in the recipe to remove the ice). Instead of agave, I used 1/4 tsp of pure stevia. I will definitely be making this one again. Thank you!

      I commented on the Mexican Chocolate Breakfast Shake yesterday and today I decided to try out this recipe. I am absolutely in love! I added honey instead of agave nectar, just one tablespoon, but it really wasn't necessary. Ever since I can remember, I've always loved oats cooked on water, never on milk, with salt instead of anything sweet, some flaxseed oil and maybe some blueberries, but I'm definitely going to test more funky recipes!       This sounds absolutely yummy! Overnight oats are one of my favorite breakfasts.

      About mangoes: for the regular, common mangoes, the way to avoid the really stringy ones is to avoid ones from Brazil. I've never had a Brazilian mango that wasn't stringy. The ones from other places seem to be okay, although I think they all have a little inherent stringiness.

      Made these for today's breakfast and my husband said, "Yummy!" after the first bite. I did add a scoop of vanilla protein powder and chia seeds (need my protein and I like how overnight oats turn out better with chia). This recipe is a definite keeper.
