    Our weekly meatless meal plans are 5-day menus that serve a family of 4 — or less if you don't mind leftovers! Click on each of the meal links below to get printable recipes, then print the meal plan and shopping list at the bottom of this post.

    Here's this week's meatless meal plan:

    Monday

    Sage Polenta Bowls with Brussels Sprouts and Wild Mushrooms RecipeSage Polenta Bowls with Roasted Brussels Sprouts & Wild Mushrooms // Creamy polenta is the perfect base for serving seasonal roasted vegetables.

    Tuesday

    Roasted Butternut Squash Panini RecipeRoasted Butternut Squash Panini // With roasted butternut squash and melty cheese, these fall-inspired sandwiches are sure to be a hit.

    Wednesday

    Slow Cooker Corn and Red Pepper ChowderSlow Cooker Corn & Red Pepper Chowder // This dairy-free chowder makes a great dinner for busy weeknights.

    Thursday

    Cheesy Kale and Quinoa CasseroleCheesy Kale & Quinoa Casserole // This casserole is so delicious, you'll forget how healthy it is!

    Friday

    Crispy Parmesan Cauliflower Steaks RecipeCrispy Parmesan Cauliflower Steaks // Cauliflower is sliced into steaks and coated with crispy panko and grated parmesan.

    Tips For This Week's Plan

    • Use leftover bread from the sandwiches to make homemade croutons or toasts to serve with the soup.
    • The non-dairy milk you buy for the soup can also be used to make the cauliflower steaks.
    • Want to make some prep work done over the weekend? The roasted vegetables for Monday's and Tuesday's dinners can be made on Saturday or Sunday. The chowder will keep for a few days in the fridge too.
    • Fresh chives can be used in place of the parsley for the cauliflower steaks.

      I've been looking for more good panini ideas! They're so quick to assemble for brown-bagging it to work, but I got sick of all my usual panini. I'll be making this for sure. I hope you and all the kitties are well, and it's great that you're back in Chicago.

      Those crispy cauliflower steaks look so so good! Stinky-cookin' veggies are my very favorite kind. Pinned!

      I love how you made them look a little like calimari. Hmmm....I wonder if I could fool my husband...(evil face emoji)
