Wow, it's November! It seems like it was just yesterday that I was complaining about summer ending. And now we're smack-dab in the middle of fall.
Fall! When everything is pumpkin flavored!

Fall! When sweet potatoes are plentiful!
So I decided to come up with a delicious sweet potato recipe for you. I thought to myself, "Hey! It's fall! And I haven't posted any sweet potato recipes yet this season!"
Then while I was editing the photos for this post, I realized: oh, I did sweet potato gnocchi last week. I did do a sweet potato recipe this season. Oops. I guess since it was pasta, somehow it didn't feel like a sweet potato recipe. Or something.
But that's okay, right? Because we can all use easy side dish ideas and that's exactly what this Apple Cider Glazed Sweet Potatoes recipe is--easy! The potatoes are roasted in the oven until they're tender and then glazed with an apple cider reduction. Simple!

Recipe
Ingredients
- 1 ½ lbs. sweet potatoes peeled and cut into ¾-inch pieces
- 1 tbsp. olive oil
- salt + pepper to taste
- ½ c. spiced apple cider
Instructions
- Preheat oven to 400 degrees.
- Toss sweet potatoes with oil on a rimmed baking sheet. Season with salt and pepper. Bake 25 minutes, stirring halfway through cooking time.
- While potatoes are roasting, heat apple cider in a small saucepan over high heat. Bring to a boil and cook until reduced to about 2 tablespoons, about 12 minutes.
- Drizzle sweet potatoes with apple cider reduction; toss to coat. Bake 5 minutes more.

I have to admit that I normally don't like sweet potatoes all that much, but this really does sound tasty. I may make these for Thanksgiving (I'm hosting).

Yes! They are the kind of side dish that's really low-maintenance, so you can pop these in the oven and forget about them for 30 minutes while you work on the more fussy recipes. 🙂

It's funny how the start of November means the middle of fall to you - I was just thinking today how it means the start of winter already! I much prefer to still think of it as fall though, I'm not ready for winter! This dish looks great - simple is good when it comes to sweet potatoes!

I've been loving sweet potatoes lately! I put some apple cider into my mashed sweet potatoes recently and loved the flavour it added, so I can imagine that making a reduction of apple cider for roasted sweet potatoes would be a great side dish too!

I'm going to have to try adding apple cider into mashed sweet potatoes! Usually I add just a little bit of almond or coconut milk, but I bet the cider would be a good replacement.

Cooking apple cider down does amazing things to it. Not only does it get sweeter, but it gets a nice tartness too. So it works perfectly with sweet potatoes.
