    How to Make A Pancake Mug Cake Recipe

    1. Spray your mug with cooking spray. 
    2. Then add in the dry ingredients and mix well. 
    3. Add in the wet ingredients and stir well. 
    4. Microwave as directed, and then once done serve.

    Spray Cup With Cooking Spray 

    Make sure your coffee mug is sprayed with cooking spray. Otherwise your pancake will stick in the cup and be a mess. 

    Microwave Safe Mug 

    Grab a microwave safe mug for this pancake recipe. It is important or it can make the mug super hot and can burn you or even break when it is cooking in the microwave. 

    Cook Time 

    Depending on your microwave the cook time can vary a bit. Make sure that you check on your pancake, and use a toothpick to stick in the center. If it comes out free of wet batter your pancake is ready.

    Chocolate Chips 

    Consider sprinkling in a few chocolate chips into the pancake batter. I would add maybe 8 or so. Since this is a single serve pancake you don't want to do too many. 

    Blueberries 

    Add in some blueberries into the pancake batter. Or even diced strawberries or other berries. Do maybe a tablespoon of fruit. Too much will water down and affect the texture of your pancake. 

    Pumpkin Spice 

    Instead of cinnamon add in pumpkin spice for fall, or even apple pie spice. It will flavor the pancakes a bit differently.

    Can you overcook the pancake? 

    Yes, you can. If you overcook the mug pancake it will become rubbery. So I recommend heating up and checking on it as it cooks. Then once it is free of wet batter remove the mug and let cool. 

    Can I make the dry mix in advance? 

    Go right ahead and meal prep the dry mix packets. Then just add the dry ingredients into the mug, add milk, butter and vanilla and then cook. This will make for a quick breakfast even easier. 

    Can I use almond milk for this pancake? 

    Feel free to use any type of milk or plant-based milk for this recipe. If you want a vegan or dairy free option you can swap to dairy alternatives.

    Ingredients

    • ½ cup flour
    • 1 tablespoon sugar
    • ½ teaspoon baking powder
    • ½ teaspoon cinnamon optional
    • ¼ teaspoon salt
    • ⅓ cup milk
    • 1 tablespoon melted butter
    • 1 teaspoon vanilla extract

    Instructions

    • Spray an 8oz mug with cooking spray
    • Add the flour, sugar, baking powder and salt to the mug and stir together
    • Pour in the milk, melted butter and vanilla and whisk until combined (some lumps are ok)
    • Microwave for 1 ½ minutes, check for doneness, and microwave an additional 15 seconds if necessary
    • Serve with fresh berries and maple syrup
