These Greens and Tofu Scramble Wraps are a quick vegan breakfast (or lunch or dinner). The recipe is easy to make in advance, freeze, and reheat later too.
Easy Recipes
It's always my goal to create recipes that aren't just tasty, but that are doable. For me, part of "doable" is ingredients that are readily available. This isn't just about you, it's also about me—I live in a smallish town and I don't want to be schlepping all over the place for ingredients either. But I was working on a tofu scramble for a while and it just wasn't coming together and I finally had to acknowledge the fact that I needed to go to Raleigh to get some nutritional yeast.
Nutritional yeast is a flaky little deactivated yeast that tastes like cheese. So it's great for vegan cooking. It's a good source of vitamins (some brands, like Bob's Red Mill, are fortified with Vitamin B12) and even contains some protein. If, like me, you can't find it at your local grocery store, you can buy nutritional yeast on Amazon.
Nutritional Yeast and Cats
But since I needed the nutritional yeast right away, I didn't order it online and went to Earth Fare, 40 minutes away, to get it. I got home and since I was going to use it the next day, I decided to leave it on the countertop, as I sometimes do. And then Chris woke up the next morning to find the bag of nutritional yeast on the stairs.
One of the cats stole my nutritional yeast.
Oh, but he (and I say he because I know it was Miso) didn't just steal it. No! He stole it, brought it over to the stairs, tore the bag open, and then peed on it.
He peed on my nutritional yeast! THE HORROR!
So the tofu scramble wraps had to be put on hold for another week. But this time when I got my nutritional yeast, I hid it well. And it was worth all the hassle and pee because the nutritional yeast was definitely what was missing from this recipe. Now if you don't want to buy nutritional yeast, you can always omit it and add cheese (vegan or otherwise) to these wraps instead.
And if you do buy nutritional yeast, make sure you hide it from your cats. Lesson learned.
Recipe
Ingredients
- 14 oz firm tofu pressed for at least 30 minutes then crumbled
- 1 tbsp nutritional yeast
- 1 tsp turmeric
- 1 tsp garlic powder
- 1 tbsp olive oil
- 1 small onion chopped
- 4 oz shiitake mushrooms stems removed & caps thinly sliced
- 3 cups torn kale spinach, or chard leaves, tough stems removed (I prefer kale)
- salt and pepper to taste
- 6 medium whole wheat tortillas
Instructions
- Combine tofu, nutritional yeast, turmeric, and garlic powder in a large bowl. Set aside.
- Heat olive oil in a large skillet over medium heat. Add onion; cook 5–6 minutes or until softened, stirring occasionally. Add mushrooms and cook 2 minutes more. Stir in greens and tofu. Continue to cook, stirring often, until greens have wilted, 2–5 minutes.
- Divide greens and tofu onto each tortilla and fold like a burrito.
- To freeze, wrap tightly in a layer of plastic wrap and place wraps in freezer bag. To reheat, remove plastic and loosely wrap in paper towel. Microwave for about 1 minute on each side. If center is still cold, continue to microwave for 15 seconds at a time until heated through.

I have no idea why but I actually have a ginormous jar of nutritional yeast. But I never think of using it! Maybe I should hide mine too - there's a high probability that Henry might pee on mine too 🙂

I am honestly a little afraid of tofu after hearing so much about how our US-grown tofu is made from GMOs. It seems that everything that is supposed to be healthy these days is just as unhealthy in other aspects! These do look really good though - I could totally make them with regular old eggs 🙂

I think tofu gets unfairly bashed by the anti-GMO people. (For the record, I try to avoid GMOs as much as possible too--I'm not saying I'm pro-GMO or anything!) I live in a smallish southern town and the only tofu I can buy at my local grocery store is GMO-free (Nasoya--it's organic too!). If I go shopping in the city, there are a bunch of additional GMO-free choices for tofu. I hate to hear people are avoiding tofu because they think it's hard to find non-GMO brands. I'd much rather hear people are avoiding tofu because they think it's gross! 😀

I love the flavour that nutritional yeast adds to things, and tofu would be the perfect neutral ingredient to add it to! I would be pretty mad if a whole bag of it was ruined, since its not cheap, but I guess it does kind of look like sawdust so I couldn't really blame a pet for thinking it was litter box material! Love your idea of putting a tofu scramble into a wrap with greens - especially if you can make it ahead of time and freeze!

I just discovered you/your site & I simply must say...THANK YOU (& to Miso, of course) for the BEST LAUGH, I've had lately...I'm talking...Sitting in my room, alone, at midnight, bust out loud, side splitting, if my kids (or neighbors, yes, it was that loud) overhear me-they'll KNOW I've lost it this time...LAUGH...And I always thought...I have to be the only person on earth who ever ends up with the goofy/crazy animals, that make you want to pull your hair out! I haven't done it myself, but I would bake it in an oven. Maybe 350 degrees for 15-20 minutes? I think wrapping it in foil first might be a good idea too.

I made a bunch of these for breakfast and they're fantastic! I added about 1/2 tsp cumin to the spice mix because the scramble made me think of eggs and I always add cumin to eggs. Absolutely delicious! I need to stock up on tofu and wraps at Costco, since they're pricey in nearby stores. Then, I'm going to make a stockpile of them!

I actually feed one of my cats brewer's yeast ( a little different than nutritional yeast but has loads of b vitamins and amino acids in it too). She gets a teaspoon of it with her cat food every day--sometimes a little more cause she is very demanding. She also likes the BY mixed with chia seeds so she gets that mixture regularly as well. She is vocal about the mixture and makes quite a noise if I forget to give it to her. The other cats are not really interested in it. So, maybe Miso is trying to tell you something by stealing it from you and peeing on it. Miso might want a little taste of it in the food on a regular basis.

May I ask how you go about freezing your burritos? I want to make some for my aunt and take them for her. Also, how do you reheat them? Microwave? For about how long?

The instructions for freezing and reheating the burritos are in the recipe--wrap the burritos in plastic wrap and place them in a freezer bag. When you're ready to reheat them, remove the plastic and loosely wrap the burritos in a paper towel. Microwave for about a minute on each side.

Oh my god I was perusing your list of fall recipes and ventured upon this one and came thisclose to bursting out laughing (at my desk, across from my unsuspecting coworker) when I read about your cat peeing on the nutritional yeast. I wonder what in the world he thought he was doing? Bahaha. Anyway, I'm starting Jamie Eason's live fit program and am trying to collect recipes that will fit the high-protein recommendations for the program. This looks perfect!
Okay also for this program, I'm thinking my main sources of low-carb vegetarian protein sources are going to have to be: tofu, tempeh, egg whites and fish (since I eat fish). Do you have any other suggestions? I do like quinoa and lentils and stuff but for this program, those count as starch. Poo.

I don't know! Our cats like eating nutritional yeast, so I don't understand why you would pee on something you love and want to eat??? Unless it was like those people who put ketchup on their desserts at restaurants to stop themselves from eating too much. Like, oh no, I can't eat anymore nutritional yeast, I must stop myself--I know, I'll pee on it! :/
Can you have nuts on your program? That's the only other thing I can think of...

Thank you for the story about your cat peeing on the nutritional yeast. I've been wanting to get some since I've heard about it at work but I have two cats who will tear open bags. Waking up to the smell of nutritional yeast and cat pee wouldn't be pleasant in my tiny studio!

Definitely store it in a jar! 🙂 I left our spice cabinet open for a few minutes several months ago and another of our cats climbed up in there and got into the nutritional yeast. To this day, she will sit in front of that cabinet and whine for me to open it because she remembers that the nutritional yeast is in there. They are crazy for that stuff!

My gawd, I might be in love. I said I was going to go vegan on January 1, 2015. I tried one time before, but it was just too difficult going straight from pescatarian to vegan. So I treaded the line as a vegetarian for 10 years. That made it far easier to finally make the jump to vegan. Outside of salt and vinegar chips, I miss nothing. But I was worried about breakfast. I'd gone from despising the smell of eggs and the look of them to eating Special K egg & veggie flatbread sandwiches on a daily basis. I knew there was a such thing as Tofu Scramble because I'd get Amy's frozen version every blue moon. But those frozen meals are about $5 a pop so that can grow expensive very quickly. I saw a link to this on Pinterest and just wanted to say thank you for posting it. I love these. I made and froze them yesterday and ate one today. Outstanding! I added red and black pepper, paprika and onions to mine with a small amount of tomatoes and shredded carrots. Spicy and filling all at the same time. Yuuuum! Happy New Year!
