A vegetarian Thanksgiving dinner doesn't just have to be mashed potatoes and rolls! Check out this complete menu of delicious (and meatless) holiday worthy recipes.
I hope you've enjoyed the week of vegetarian Thanksgiving posts that I put together with Rikki!
I've gotten so used to working on my own as a blogger that it's nice to collaborate with someone else once in a while and see my food through another photographer's eyes (or camera lens).
And Rikki isn't just an amazing photographer, but she's also a great friend and mentor who totally gets my food, so I can't imagine working with anyone else.
I'm totally thrilled with how all of her photos turned out in these vegetarian recipes for a vegetarian thanksgiving menu!
Here's our complete menu of vegetarian Thanksgiving recipes:
Quinoa-Stuffed Acorn Squash Rings
Roasted acorn squash rings stuffed with quinoa, apples, cranberries, sage, and cheddar. A main dish for vegetarians that also works as a side dish for everyone else!
Brown Butter Mashed Sweet Potatoes
Creamy mashed sweet potatoes lightly sweetened with browned butter and topped with a stovetop pecan granola. The perfect alternative to the typical marshmallow-topped sweet potato casserole.
Rosemary Roasted Carrots
Heirloom carrots make this simple Thanksgiving side dish a showstopper.
Green Beans & Lemon Parmesan Panko
Tender roasted green beans are finished with a crunchy lemon parmesan panko topping.
Wild Mushroom Gravy
Don't forget the gravy! This Wild Mushroom Gravy is the perfect accompaniment to your favorite mashed potato recipe.
Gluten-Free Vegan Stuffing
This is my favorite recipe from our Thanksgiving line-up. I'm usually not a big stuffing fan, but between the Whole Grain bread and fresh veggies, this was the best gluten free stuffing–no, the best stuffing, period–I've ever had.
Ginger Orange Cranberry Sauce
The secret ingredient in this cranberry sauce is ginger ale! Don't be too intimidated to make your own cranberry sauce--it couldn't be easier.
Easy Vegan Bread Pudding
Make this easy dessert a day in advance and let the bread pudding cook while you eat dinner, and this dessert is completely stress-free. Loaded with flavor from maple syrup, chopped nuts, and blueberries.
I hope we've been able to show you that a vegetarian Thanksgiving dinner doesn't have to be about sacrifice or bland food or sad meat substitutes.
As I like to say, when the food you're eating is good, you focus on what's on your plate, not what's missing from it! Thanksgiving is about gratitude, family, and friends - not turkey.
And if you're still planning that menu, be sure to check out our new Vegan Thanksgiving Cookbook too!

Last year, I made a Christmas dinner where everything was vegan except store-bought honey-baked ham, and the crock pot full of Mac-n-cheese for the kiddos. (We had guests so I was reluctant to tell their kids to "suck it up, buttercup," like I do my own.) no one even suspected the sides were vegan, and it was the most delicious Thanksgiving dinner ever!
Kiersten says
I love that! We do the same with our family. We have 2 vegetarians and 2 vegans, so all the sides are vegan and none of the meat eaters seem to mind. 🙂 And with all those veggie sides, we don't even need a vegan main dish!

YUM! I'm finally turkeyed out and ready to try something new for Thanksgiving this year. Your menu looks fabulous. I was thinking stuffed squash but couldn't figure out what I wanted to use for the stuffing....the quinoa is perfect!

Thank you for the wonderful recipes! I'm thinking of making the bread pudding tomorrow evening, but I don't own a slow cooker. Any suggestions on how to do it in the oven instead? The advice would be much appreciated!! Thanks!

Wow! I cannot thank you enough! My wonderful in-laws are spending Thanksgiving with us and my momma in-love is basically vegan, every time she stays with us, I always feel terrible that she can’t eat what we are eating and I really wanted to make her feel included this Thanksgiving- with a few tweaks, I know I can make this meal work for her! This is a stunning presentation and it all sound so delicious! You just made my Thanksgiving a whole lot more thankful ☺️

Yay! We're so glad you found this helpful, Rachel!

Hello,
I can't find the recipe for the stuffing. Is there any way you can have that re-posted? I have a few family members who are requesting the recipe for Thanksgiving this year 🙂
Thanks!
Katie Trant says
Hey Purvi, we're working on sorting out the broken links. Will get back to you!

It’s too bad that these delishious looking dishes done like to any of the recipes. Thanks for the ideas, I’ll have to look elsewhere for the actual recipes.

Hi!
I would love to make the whipped sweet potatoes and the green beans but not seeing a recipe, it just leads me to the photographers website. Do you have these potentially in another location on the site? Thanks so much! Everything looks so beautiful!
