This vegan apple crisp is the cozy, no-fuss dessert you'll want on repeat all fall and winter. Soft, caramelized apples sit under a crunchy oat topping, and every single bite is 100% dairy-free, egg-free, and gluten-free.
This apple crisp (some call it an apple crumble) comes together with less than 10 ingredients and almost no hands-on work. Peel and slice the apples, stir together the topping, layer, and bake — that's the whole process.
The oat topping gets its buttery texture from vegan butter, its subtle caramel sweetness from coconut sugar, and its secret richness from a scoop of peanut butter, which is the ingredient that really sets this crisp apart. A drizzle of maple syrup over the apples keeps everything soft and glossy underneath that crunchy top layer.
Key Ingredients & Substitutions
- Cooking apples. Granny Smith apples hold their shape best during baking, but Honeycrisp or Braeburn work well too if you want a slightly sweeter crisp.
- Maple syrup. Sweetens and softens the apples as they bake. Agave nectar is a fine substitute.
- Coconut sugar. Gives the topping a light caramel flavor and contains trace minerals like iron and zinc, so I prefer it to plain white sugar. Light brown sugar works as a 1:1 swap.
- Gluten-free all-purpose flour and rice flour. Used together, they give the topping structure and a good crumbly texture. If gluten isn't a concern for you, regular all-purpose flour works fine in place of both.
- Gluten-free oats. Old-fashioned rolled oats give the best texture here — just double-check the label if you need them certified gluten-free.
- Peanut butter. My secret ingredient. It adds richness and a subtle nutty flavor that makes this crisp stand out. I use a smooth, no-stir peanut butter, but homemade peanut butter works beautifully too. Almond butter or sunflower seed butter (for a nut-free option) are good subs.
- Vegan butter. Binds the topping into crumbs and gives it that classic buttery flavor. I like this vegan butter, but dairy-free margarine works too.
Helpful Tips
Slice your apples evenly. Aim for chunky, similarly sized pieces (about half-inch slices) so they all soften at the same rate. Too thin and they'll turn to mush; too thick and the centers may still be firm when the topping is done.
Keep the topping cold and work it quickly. If you handle the crumb mixture too much with your hands, the vegan butter starts to melt and the topping can turn into a paste instead of staying in loose, crumbly pieces. A fork or pastry cutter helps you combine everything fast without overworking it.
Prep components ahead, but slice apples last. The oat topping can be mixed up to 2 days in advance and kept in an airtight container in the fridge. Apples, on the other hand, brown quickly once cut, so slice them as close to baking time as you can.
Watch for color, not just time. Ovens vary, so start checking around the 35-minute mark. You're looking for a deep golden-brown topping and apples that are fork-tender but not falling apart — that's your cue it's ready.
Let it rest for a few minutes before serving. Pulling it straight from the oven means a very hot, very runny filling. Five to ten minutes of rest lets the juices thicken slightly so each serving holds together better.
Variations
- Add warming spices. Stir a teaspoon of cinnamon and a pinch of ground ginger or nutmeg into the apples for a cozier, more spiced flavor.
- Swap the fruit. Pears work beautifully in place of some or all of the apples, and a handful of fresh or frozen cranberries adds a tart contrast.
- Go nut-free. Swap the peanut butter for sunflower seed butter and skip any nut toppings to make this fully nut-free.
- Add crunch to the topping. Stir chopped pecans or walnuts into the crumble mixture before baking for extra texture.
- Make individual crisps. Divide the apples and topping between a few small ramekins instead of one big dish — they'll bake a bit faster, so start checking at the 25-minute mark.
- Boost the sweetness. If your apples are especially tart, add an extra tablespoon or two of maple syrup or coconut sugar to taste.
Serving Ideas
This crisp is best served warm, and a scoop of dairy-free vanilla ice cream on top is the classic move — it melts slightly into the hot topping and apples, which is exactly what you want. Keep the ice cream flavor simple so it doesn't compete with the caramelized apples.
For an extra-indulgent finish, add a drizzle of vegan caramel sauce or a spoonful of coconut whipped cream. It also makes a great addition to a holiday dessert table alongside something like vegan cinnamon rolls for a full spread of cozy, plant-based treats.
Storing & Freezing
Store leftover apple crisp in an airtight container in the fridge for up to 3 days. The topping will soften slightly as it sits, but it still tastes great.
To freeze, let the crisp cool completely, then transfer it to a freezer-safe container for up to 1 month. Thaw it in the fridge overnight before reheating, covered in foil, in a 350°F (180°C) oven for about 15 minutes, or until warmed through.

📖 Recipe
Equipment
- Conventional oven
Ingredients
- 1 ½ lbs cooking apples, peeled and sliced
- ¼ cup maple syrup
- ¾ cup coconut sugar
- ¾ cup gluten-free flour
- ¾ cup rice flour
- ½ cup gluten-free oats
- ¼ cup peanut butter, smooth
- 6 tablespoon vegan butter
Instructions
- Preheat the oven to 350°F (180°C) and lightly grease a rectangular baking dish.
- Peel and slice the apples into chunky, roughly half-inch pieces. Layer them in the baking dish and drizzle evenly with the maple syrup.
- In a large mixing bowl, combine the coconut sugar, gluten-free flour, rice flour, oats, peanut butter, and vegan butter. Work quickly with a fork or pastry cutter until the mixture forms small, even crumbs — avoid overworking it with your hands, or the butter will melt and the topping will clump instead of staying crumbly.
- Scatter the crumb topping evenly over the apples, building it up as thick as you like.
- Bake for 40-45 minutes, until the topping is golden brown and the apples are fork-tender. Let it rest for 5-10 minutes before serving.
- Serve warm, ideally with a scoop of dairy-free vanilla ice cream.
