66 Creative Vegetarian Chickpea Recipes
The humble chickpea (a.k.a. garbanzo bean) is so much more than a means to hummus. This little legume is packed with protein, minerals and antioxidants, and a 1-cup serving provides half the daily recommended intake of fiber. Their mild flavor and creamy texture makes them extremely versatile: cooked garbanzos can be roasted and served as a snack or salad topping, blended into dips and soups (and even baked goods), or used whole in sandwiches, tacos or main dishes.

Here are 66 of the most creative—and delicious—vegan and vegetarian chickpea recipes that prove garbanzos are great in everything.
