Overnight oatmeal in a jar is the easiest breakfast ever! This vegan Coconut Mango Overnight Oatmeal recipe is both delicious and healthy.
Mango Season
Despite having lived in the tropics, I can't really tell you when mango season is. But I do know that a few times a year, there's suddenly an abundance of champagne mangoes at the grocery store.
They'll be strategically positioned at the front of the produce section, boxes stacked precariously on top of each other. And they're always 5 for $5.
While I like regular mangoes just fine, I like the champagne ones even more. They're a little bit smaller, but I have yet to get one that wasn't sweet or that was stringy or weird in some other way.
So, in summary, I love champagne mangoes and it's that time of year- cheap champagne mango season!
About the Recipe
I've been trying out different kinds of overnight oatmeal lately, but I haven't had success until I came up with this Coconut Mango Overnight Oatmeal recipe.
The first time I made overnight oatmeal in a jar, I tried using steel cut oats. I've read other people raving about using those in overnight oats, but I have TMJ and chewing on them gave me a jaw ache that stayed with me the rest of the day. Not good!
I also tried adding cocoa powder to my oats, but that was not my jam- I had to let my husband finish that batch of oatmeal.
After purchasing a bunch of cheap champagne mangoes last week, I thought I'd try overnight oatmeal one more time, with mangoes and coconut. And if it didn't work out, I would stop trying to make this overnight oatmeal thing happen for me.
Well, I guess it's true that the third time's the charm, because the Coconut Mango Overnight Oatmeal was definitely a winner.
I find oatmeal to be a little bit heavy, so adding an equal amount of mangoes to the oats was the perfect way to lighten it up.
And the best thing about overnight oats is that you do the (minimal) prep work the night before and your oatmeal is done in the morning. You don't even have to heat it up (although you can if you want)!
I've been making this with my cheapo mangoes all week and I don't think I'm going to get tired of it anytime soon.

I made this last night with soy milk and sultanas, I just had it for breakfast and I loved it. Having made Bircher muesli before I wasn't keen on the fruitiness from the apple juice but I will be experimenting with you recipe with different fruits. Thank you
Kiersten says
I'm glad you liked it! I've tried just about every fruit in it and it always turns out well. 🙂
Aradi says
It's my favourite recipe of overnight oatmeal! I really can't get tired of this. I've been eating it at least once a week for like 3 months 🙂 your recipe is a winner!
Kiersten says
I'm so glad you enjoy it that much! 😀 It's one of my favorites too--I just wish I could find good mangoes so I could make it more often!
Bri says
Have you thought about using frozen mango?
Kiersten says
I haven't used frozen mango myself, but I'm sure it would work!
habanero says
Frozen mangoes work great. Love, love, love this recipe! I make a triple batch and have it through the week. I also add a little ground flax. Maybe 1T.
Kiersten says
I'm glad you enjoy it! I often add ground flax or chia too. It's really versatile!
Marsha Paulsen Peters says
Sounds MARVELOUS. I'll do it. Why the Resealable container? does it need mega-sealing for it to 'process' overnight? if so, what else could I use to secure it so?
Kiersten says
Nope, you just need any container with a lid, but if you don't have that, a little foil or plastic wrap will do--I don't like to put things in the fridge for that long without covering them. 🙂

Wow, just made this tonight and took a little bite- delicious. Hassle free to make, and makes a hassle free morning. One thing that I added and recommend if anyone is obsessed with these like me- Chia Seeds!! I put about 1 and 1/2 TBSP in with this recipe and it made the consistency very nice. Thank you for this simple and tasty recipe!
Kiersten says
I'm glad you enjoyed it! Since I first posted this recipe, I've been adding chia seeds when I make mine now too. 🙂
Melinda says
I'm obsessed with this recipe! My husband eats it warm but I love it cold. I want to know where that jar is from? I want one!!!
Kiersten says
They're Weck canning jars. I bought mine at Crate & Barrel, but I know they also sell them at Williams-Sonoma. You can order them on Amazon too, but I think you have to buy a set of them when you order from there. So glad you like the recipe! 😀

I'm blogging about breakfast this week, and found your recipe. I make overnight oatmeal with dried and fresh berries all the time, but can't wait to try this flavor combo! I'll use the sliced mangos in the jar because I'm a terrible mango peeler!
Many Thanks
Kiersten says
I've had people say they use frozen mangoes too and it works well. 🙂
JenI says
All if these overnight oat meals sound so amazing!! I can't wait to try them. Do you eat them cold or heat them up in the am after the flavors developed? Thanks for sharing!
Kiersten says
You can eat them cold or warm. I prefer them cold, especially when it's warmer outside. 🙂
Donna says
How do you eat this warm. How do you heat it up.
Kiersten says
Heat it in the microwave or in a saucepan over low heat.
Haley D says
I am going to make this tonight! Looks so yummy 🙂 May I ask where you got your silverware? That spoon is GORGEOUS and we've been on the lookout for some new silverware, but we're pretty picky, so haven't had much luck. Thanks in advance!
Kiersten Frase says
They were a wedding present, so I don't know if they're still available, but they were from Bed Bath & Beyond. I can't remember the manufacturer or the name of the set though!
Haley D says
Aww thank you! 🙂 We still have a gift card from our wedding for BB&B. Will have to check it out 🙂

thanks for your comment on the TMJ, I had the same problem. Mangos are my fav fruit, so I always have a couple of cans of mangos in the pantry for when they are not fresh(better than going without, I figure). They are difficult to find. I will definitely have to try this combination, sounds good. Instead of adding agave to my oats, I just add some of the juice from the can of fruit.
Kiersten Frase says
I hope you enjoy the recipe! When mangoes aren't in season, I substitute other fresh fruits. I've made this with just about everything under the sun--strawberries, blackberries, peaches. It all works! 🙂
Aakanksha says
Whoa! I just got myself a huge pack of oatmeal, and living in India in summers equates to being flooded with mangoes 🙂
This recipe is going to the refrigerator today!
Kiersten Frase says
I hope you enjoy it! 🙂

I have made these a time or two now- I think I may have one-upped you on the coconut, though, and added toasted coconut. This was a great breakfast idea that felt like a bit of a food escape with those tropical flavors. Thank you!
Kiersten Frase says
I'm totally adding toasted coconut next time I make this now! 🙂
Laura says
This was amazing, mine tasted like cake batter !
Thanks so much !
Susan says
Wow! This is amazing. Just wondering, can I substitute with another fruit, mangoes aren't in season right now where I'm from?
Star says
Do we heat this up or eat it cold???
alex says
Just wondering can you make this for a week in advance?
Kiersten Frase says
No, I wouldn't make it a week in advance.

I tried this recipe last night and had it for breakfast this morning. It was so good! I was pleasantly surprised by how good it was with so few ingredients. I used frozen mango ( I microwaved it before using it in the recipe to remove the ice). Instead of agave, I used 1/4 tsp of pure stevia. I will definitely be making this one again. Thank you!

I commented on the Mexican Chocolate Breakfast Shake yesterday and today I decided to try out this recipe. I am absolutely in love! I added honey instead of agave nectar, just one tablespoon, but it really wasn't necessary. Ever since I can remember, I've always loved oats cooked on water, never on milk, with salt instead of anything sweet, some flaxseed oil and maybe some blueberries, but I'm definitely going to test more funky recipes! Thanks so much for this one! Cheers, M
Madeline says
Was the shredded coconut the sweetened kind from the baking aisle
or the natural/raw kind from the frozen aisle?
Thanks!
Christine says
Been wanting to try making overnight oats for a while now, and this was a good one to start with! SO GOOD!!!! Thank you, we are really enjoying them 🙂
Kiersten Frase says
I'm glad to hear it! This is one of my all-time favorite breakfasts and I still make it years after posting the recipe. 🙂
Minh Nguyen says
Oh how I love overnight oatmeal, especially in the summer after a morning workout! so refreshing and still nutritious!
Anusha says
Can i use honey instead of agave nectar?
Dana Raidt says
Hi Anusha,
We haven't tested it with honey, but it seems like it would work since they're similar in texture and flavor!
Susan says
This sounds absolutely yummy! Overnight oats are one of my favorite breakfasts.
About mangoes: for the regular, common mangoes, the way to avoid the really stringy ones is to avoid ones from Brazil. I've never had a Brazilian mango that wasn't stringy. The ones from other places seem to be okay, although I think they all have a little inherent stringiness.
Susan says
Made these for today's breakfast and my husband said, "Yummy!" after the first bite. I did add a scoop of vanilla protein powder and chia seeds (need my protein and I like how overnight oats turn out better with chia). This recipe is a definite keeper.
