    This Week's Meatless Meal Plan | 09.28.15

    Our weekly meatless meal plans are 5-day menus that serve a family of 4 — or less if you don't mind leftovers! Click on each of the meal links below to get printable recipes, then print the meal plan and shopping list at the bottom of this post.

    Here's this week's meatless meal plan:

    Monday

    Creamy Wild Rice & Mushroom Soup RecipeCreamy Wild Rice and Mushroom Soup // This easy soup is creamy and comforting without being heavy.

    Tuesday

    Broccoli Cheddar Pot Pies RecipeOh-So-Easy Broccoli Cheddar Pot Pies // Using puff pastry instead of pie crust makes these pot pies doable for a weeknight dinner.

    Wednesday

    Italian-Style Spaghetti Squash FrittersItalian-Style Spaghetti Squash Fritters // Spaghetti squash isn't just a substitute for noodles! Use it to make these crispy fritters.

    Thursday

    Autumn Nourish Bowls with Brussels Sprouts + Sweet PotatoesAutumn Nourish Bowls with Brussels Sprouts and Sweet Potatoes // Say hello to fall with these veggie-packed meal bowls.

    Friday

    Pumpkin-Sage Baked Ziti RecipePumpkin Sage Baked Ziti // Creamy pumpkin pasta gets topped with cheese and baked until bubbly and browned to perfection.

    Tips For This Week's Plan

    • The pot pies call for regular sharp cheddar and the baked ziti calls for white—instead of buying both, just buy 7 ounces of white cheddar.
    • The nourish bowls use 1 cup of chickpeas, but a can has about a cup and a half. Just use the whole can in the recipe or throw the extra half cup in a salad for lunch the next day. (You might have some leftover kale too—also perfect for lunch salads!)
    • Use leftover parsley from the soup as the herbs for the spaghetti squash fritters.

      Wow! Also, cream of mushroom soup has been on my mind. It's still in the 70's up here in Minnesota so I'm not ready to think Fall and hot foods just yet but soup? Mmmm...
