Tips For This Week’s Plan

  • To save time, the butternut squash for the burritos can be made up to 3 days in advance and refrigerated until Wednesday.
  • If you’re not a fan of pepper jack, any cheese you like or have on hand can be used in the burritos.
  • Friday’s dinner is filling enough on its own, but you can serve it over rice or with a side of naan if you like.
