This super-simple Pineapple Coconut Vitamin C Smoothie hides a powerful little secret inside all that creamy deliciousness: it's got 140 mg of the cold-fighting vitamin. Consider adding vitamin-rich papaya, guava, kiwi, more orange juice (or orange segments), a few fresh kale leaves, or even a few sprigs of parsley.

Ingredients
- 1 cup fresh or frozen pineapple chunks
- 1 medium frozen banana
- ¾ cup light coconut milk
- ½ cup pure orange juice
Instructions
- Place all ingredients in a blender and puree until smooth. Pour into a glass and serve with a straw.

Hi Liz, I haven't tried it without a banana ... with so few ingredients, it is pretty essential to the recipe, but might be totally doable! Perhaps add some ice to keep it cold and a little Greek yogurt for texture.

Is the coconut milk the one out of the can or the cold case paper jug?

Sky, I used canned lite coconut milk. But it's a pretty flexible recipe; either will work! The canned coconut just tastes richer.
