Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup mashed avocado about 2 medium
- ¾ cup sugar
- ¼ cup oil
- ¼ cup milk
- 2 large eggs
- 1 teaspoon vanilla
- ½ cup chopped pecans
Instructions
- Preheat oven to 350 F, grease and flour a 9x5 baking pan and set aside
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside
- In a separate bowl, whisk the avocado, sugar, oil, milk, eggs, and vanilla until smooth
- Add the flour mixture to the avocado mixture, then stir in the pecans
- Transfer batter to the prepared pan and bake for 50-60 minutes, until a toothpick inserted into the center comes out clean
- Allow to cool 10 minutes in the pan before removing and cooling on a wire rack
