Ingredients

2 cups flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup mashed avocado, about 2 medium
¾ cup sugar
¼ cup oil
¼ cup milk
2 large eggs
1 teaspoon vanilla
½ cup chopped pecans

Instructions

Preheat oven to 350 F, grease and flour a 9x5 baking pan and set aside
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside
In a separate bowl, whisk the avocado, sugar, oil, milk, eggs, and vanilla until smooth
Add the flour mixture to the avocado mixture, then stir in the pecans
Transfer batter to the prepared pan and bake for 50-60 minutes, until a toothpick inserted into the center comes out clean
Allow to cool 10 minutes in the pan before removing and cooling on a wire rack
