Making Watermelon Popsicles
First, start by selecting a ripe watermelon. Look for a watermelon that feels heavy for its size, has a uniform shape, and has a creamy yellow spot on the bottom (this indicates that it's ripe). Then, cut the watermelon into small cubes and remove any seeds.
Next, add the watermelon cubes to a blender or food processor along with a bit of apple juice, and blend until smooth. You can also add a little bit of agave syrup or honey if you want the popsicles to be sweeter. Pour the mixture into popsicle molds and add popsicle sticks. Freeze the popsicles for at least 4 hours, or until they're completely frozen.
When it comes time to enjoy your watermelon popsicles, simply remove them from the molds and serve. The popsicles should be bright pink and bursting with flavor. And the best part? They’re ice cold and bursting with flavor!
Tips & Variations
Add lime!
For an even more refreshing twist, add a squeeze of lime juice to the watermelon and apple juice mixture before freezing.
Mix up the fruits.
If you're feeling adventurous, try adding other fruits to the popsicle mixture. Blueberries, strawberries, and raspberries would all pair well with watermelon. Uses this as a base recipe and experiment with your faves!

No popsicle molds?
If you don't have popsicle molds, you can use small paper cups and wooden sticks in a pinch. But if you plan on making popsicles at least a few times each summer, it’s worth it to grab an inexpensive popsicle mold – I like this one.
Make creamy popsicles.
If you want your popsicles to be a bit creamier, try adding a splash of coconut milk or yogurt to the watermelon mixture before blending.
Make a watermelon slushie!
If you're just too impatient to wait for popsicles to freeze, this recipe also make a great slushie. Just blend the watermelon mixture with some ice cubes and serve it!
Make boozy popsicles.
And finally, if you want to turn these popsicles into a boozy treat for a summer party, add a splash of vodka or tequila to the watermelon mixture before freezing (just remember to keep them out of reach of the kids!).
