Monday
Sage Polenta Bowls with Roasted Brussels Sprouts & Wild Mushrooms // Creamy polenta is the perfect base for serving seasonal roasted vegetables.
Tuesday
Roasted Butternut Squash Panini // With roasted butternut squash and melty cheese, these fall-inspired sandwiches are sure to be a hit.
Wednesday
Slow Cooker Corn & Red Pepper Chowder // This dairy-free chowder makes a great dinner for busy weeknights.
Thursday
Cheesy Kale & Quinoa Casserole // This casserole is so delicious, you'll forget how healthy it is!
Friday
Crispy Parmesan Cauliflower Steaks // Cauliflower is sliced into steaks and coated with crispy panko and grated parmesan.
Tips For This Week's Plan
- Use leftover bread from the sandwiches to make homemade croutons or toasts to serve with the soup.
- The non-dairy milk you buy for the soup can also be used to make the cauliflower steaks.
- Want to make some prep work done over the weekend? The roasted vegetables for Monday's and Tuesday's dinners can be made on Saturday or Sunday. The chowder will keep for a few days in the fridge too.
- Fresh chives can be used in place of the parsley for the cauliflower steaks.

I've been looking for more good panini ideas! They're so quick to assemble for brown-bagging it to work, but I got sick of all my usual panini. I'll be making this for sure. I hope you and all the kitties are well, and it's great that you're back in Chicago.
