Here’s this week’s meatless meal plan:

End-of-Summer Veggie Stir-Fry // Eggplant, bell pepper and carrots are tossed with a citrusy sauce in this easy stir-fry.
Butternut Squash Burritos with Black Beans and Kale // Burritos that are healthy and delicious? Yes!
Chipotle Peach BBQ Farro Sandwiches // Peach jam adds a touch of sweetness to these meaty (but meatless!) sandwiches.
Slow Cooker Indian Spiced Chickpeas and Potatoes // Your house will smell amazing after this dinner has been cooking all day!
Tips For This Week’s Plan
- To save time, the butternut squash for the burritos can be made up to 3 days in advance and refrigerated until Wednesday.
- If you’re not a fan of pepper jack, any cheese you like or have on hand can be used in the burritos.
- Friday’s dinner is filling enough on its own, but you can serve it over rice or with a side of naan if you like.
