Here’s this week’s meatless meal plan:

Monday

Wednesday

Butternut Squash, Kale and Black Bean Burritos Butternut Squash Burritos with Black Beans and Kale // Burritos that are healthy and delicious? Yes!

Thursday

Chipotle Peach BBQ Farro Sandwiches Chipotle Peach BBQ Farro Sandwiches // Peach jam adds a touch of sweetness to these meaty (but meatless!) sandwiches.

Friday

Slow-Cooker Indian-Spiced Chickpeas & Potatoes Slow Cooker Indian Spiced Chickpeas and Potatoes // Your house will smell amazing after this dinner has been cooking all day!

Tips For This Week’s Plan

  • To save time, the butternut squash for the burritos can be made up to 3 days in advance and refrigerated until Wednesday.
  • If you’re not a fan of pepper jack, any cheese you like or have on hand can be used in the burritos.
  • Friday’s dinner is filling enough on its own, but you can serve it over rice or with a side of naan if you like.
