This super-simple Pineapple Coconut Vitamin C Smoothie hides a powerful little secret inside all that creamy deliciousness: it's got 140 mg of the cold-fighting vitamin. For women, that's nearly double the recommended daily allowance (source: Mayo Clinic). Want even more Vitamin C? Consider adding vitamin-rich papaya, guava, kiwi, more orange juice (or orange segments), a few fresh kale leaves, or even a few sprigs of parsley.

Servings: 1 smoothie

Ingredients
- 1 cup fresh or frozen pineapple chunks
- 1 medium frozen banana
- ¾ cup light coconut milk
- ½ cup pure orange juice
Instructions
- Place all ingredients in a blender and puree until smooth. Pour into a glass and serve with a straw.

Hi Debbie, oh man, that's rough - bananas are definitely a key ingredient for tons of smoothies (as you've noticed!), they add wonderful creaminess and sweetness, and when they're frozen you don't need to add ice. For this recipe, maybe you can puree the coconut milk and pineapple together then freeze into ice cubes? Put them in the blender and add the orange juice; blend. Maybe add a little honey or other sweetener if needed. If you eat dairy, a little yogurt can help thicken smoothies nicely, too. Hope that helps!

Like so many, I too am fighting a cold so this smoothie looks like just the thing to help. Will probably throw in a scoop of pea protein powder (I use Growing Naturals plant based protein powders) as I'm also trying to increase my protein intake. Hi Jennifer, I use canned light coconut milk. It depends on the store - I usually buy it at Trader Joe's, and it's in the same aisle as most all of their other canned goods. You can generally also find it in the ethnic section of most grocery stores. Yes, you can also buy coconut milk in the carton in most dairy sections, but I find it doesn't have quite the rich, coconutty flavor as canned - still good, though! Hope that helps!

It might be a tad thinner and wouldn't have the coconutty taste, but I think it would be plenty good! Personally I would maybe increase the banana and the pineapple a tad if going that route. I love almond milk in smoothies! 🙂
