These date and apple muffins are soft, lightly spiced, and studded with chewy bits of date in every bite-an easy make-ahead breakfast or snack that doesn't taste like it's secretly better for you.

Key Ingredients & Substitutions
- Apple sauce. Keeps the muffins moist while keeping added fat in check, and it's where the "apple" in date and apple muffins comes from. For a deeper apple flavor, swap in an equal amount of homemade apple butter instead.
- Chopped dates. Use soft, sticky dates like Medjool or Deglet Noor-if yours are dry and firm, soak them in warm water for 10 minutes and drain well before chopping so they bake up tender instead of chewy-tough.
- Honey. Adds sweetness and helps keep the crumb tender. Swap in an equal amount of maple syrup to make these muffins fully vegan.
- Egg. Binds the batter together. For a vegan version, use a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, rested for 5 minutes).
- Milk. Any milk works here-dairy or a plant-based milk like oat or almond both turn out great.
- Vegetable oil. Keeps the muffins moist. Melted coconut oil or a neutral oil like avocado oil can be used in its place.
Helpful Tips
Don't overmix the batter. Once the wet and dry ingredients meet, stir just until you no longer see streaks of flour. A few small lumps are totally fine-overmixing develops the gluten in the flour and leads to dense, tough muffins instead of light, tender ones.
Toss the dates in a little flour first. If your dates are especially sticky, toss them with a spoonful of the flour from the recipe before folding them in. This keeps them from clumping together or sinking straight to the bottom of the muffin cups.
Fill the cups generously. For nicely domed muffin tops, fill each muffin cup about two-thirds to three-quarters full rather than just halfway. This batter doesn't spread much, so a fuller cup gives you a better rise.
Check for doneness with a toothpick. Ovens vary, so start checking a couple of minutes before the timer goes off. A toothpick inserted into the center of a muffin should come out clean or with a few moist crumbs-not wet batter.
Let them rest before removing from the tin. Give the muffins about 5 minutes in the pan after baking. This lets them firm up slightly so they don't fall apart when you lift them out onto a cooling rack.
Variations
- Add warm spices. Stir 1 teaspoon of cinnamon and a pinch of nutmeg or cloves into the dry ingredients for a warmer, more spiced flavor-similar to what we do in our apple spice cake.
- Add fresh apple. Fold in ยฝ cup of finely diced fresh apple along with the dates for little pockets of juicy fruit throughout.
- Add crunch. Stir in ยฝ cup of chopped walnuts or pecans for texture and a nutty flavor that pairs beautifully with the dates.
- Make them gluten-free. Swap the all-purpose flour for a 1:1 gluten-free baking blend. The texture will be a touch denser but still tender.
- Turn them into mini muffins. Divide the batter among a mini muffin tin instead and reduce the bake time to about 12 minutes, checking early with a toothpick.
- Add a streusel topping. Sprinkle a simple mix of oats, brown sugar, and a little melted butter or oil over the tops before baking for a bakery-style finish.

Serving Ideas
These muffins are best enjoyed slightly warm, with the dates soft and a little gooey. Split one in half and spread it with butter, cream cheese, or a smear of nut butter for extra richness.
For a full breakfast spread, serve them alongside a bowl of apple cinnamon buckwheat bircher muesli and a hot cup of coffee or tea. They also make a great addition to a brunch table or a lunchbox treat that travels well.
Storing & Freezing
Store cooled muffins in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. Because these muffins are naturally moist from the applesauce and dates, refrigerating helps keep them fresh a bit longer without drying out.
To freeze, let the muffins cool completely, then wrap each one individually in plastic wrap and store in a freezer-safe bag or container for up to 3 months. Thaw at room temperature for a couple of hours, or microwave a wrapped muffin for 20-30 seconds for a warm, fresh-from-the-oven texture.

Terry says
I made these this morning in a silicone muffin pan and they came out beautifully. I think nuts would make a nice addition. I unfortunately only had medjool dates with the pits, so cutting, removing pits and dicing dates was a bit of a pain, and I would buy already chopped dates next time. Plus the dates were so sticky and clumpy that I added them to the flour, mixing well to separate and lighten BEFORE I added the wet ingredients. This worked a charm. Filled the cups to the top and baked for exactly 20 minutes as directed. Delicious! I am making another batch to share with work colleagues.
