Monday

Tips for This Week’s Vegetarian Meal Plan

  • The caramelized onions for Tuesday’s quesadillas require a bit of cook time, but most of it is hands off. To save more time, you can even make the caramelized onions a day or two ahead.
  • Wednesday’s frittata and Friday’s stew both call for harissa – a spicy Moroccan pepper sauce. Look for it in your supermarket’s international section.
  • Friday’s stew can be served over rice or couscous. We put rice on the list, since you can use that for Monday’s soup as well. If you prefer couscous, add it to the list.
