These cookies are a true comfort food. Soft and chewy, with just the right level of sweetness, paired with those rich, melty chocolate chips. Oh, yum!
They are soft on the inside with a crunchy outside and a hint of chewiness.
These cookies are delicious enough by themselves, but you can also pair them with any nut or seed butter of your choice, dip them in this Vegan Nutella, or serve them crumbled over a vegan smoothie bowl.

Tips & Tricks
Make it gluten free. Simply use a gluten-free baking flour to make these cookies gluten-free. I've tested it out, and it's actually what I use when I make these for myself!
Coconut Sugar. I prefer coconut sugar for baking, as it's a bit less processed and also sure to be vegan friendly. (Some brands of white sugar are not!) But you can use regular granulated white sugar if you prefer. Or even brown sugar for a slightly different flavor.
Plant Based Milk. I used almond milk in these vegan cookies, but you can also use soy milk or cashew milk for the same result.
