Creamy Vegetarian Macaroni Salad

  • 1½ cup macaroni
  • 1 pepper, cut into small pieces
  • 2 carrots, grated
  • 1 tomato, cut into small pieces
  • ¼ cup green onion, chopped
  • ¼ cup fresh parsley, chopped


  • ½ cup plain yogurt
  • ¼ cup mayonnaise
  • 1 lime, for juice
  • 1 tbsp Dijon mustard
  • 2 tsp honey
  • 2 tsp red wine vinegar
  • salt and pepper


  1. Cook the macaroni pasta as indicated on the package.
  2. In a large bowl, combine the cooked pasta, pepper, carrots, tomato, green onions, and parsley.
  3. In another bowl, combine all sauce ingredients.
  4. Add the vinaigrette sauce mixture to the pasta. Mix until coated.
  5. Cover and place in the refrigerator for a least 1 hour.
