How to Make Banana Oatmeal Cookies
It couldn’t be easier, even for someone who’s new to baking!
First, preheat the oven to 350 degrees F / 180 degrees C.
Then, add the oats, baking powder, baking soda and cinnamon to a large mixing bowl and whisk together.
Next, add the bananas, apple cider vinegar and stir until all the ingredients are well-combined. Then, fold in the chocolate chips.
Finally, roll the dough into cookie shapes and arrange them on a sheet of parchment paper. Bake in the oven for 10-12 minutes.
That’s it! Serve and enjoy (preferably with ice cream).

- 2 tbsp chopped nuts I used almonds
- 2 medium bananas mashed
- 1 tbsp apple cider vinegar
- ¼ cup vegan chocolate chips

The end result was a delicious “cakey” cookie with just the right amount of sweetness. I used walnuts and added a little (1/8 cup) leftover unsweetened coconut I had on hand. The bananas were on the smaller side, so the mixture was a little too crumbly at first. I added a 3rd banana to help bind it all together and it turned out great. Very easy to make.

The hardest part was buying the vegan ingredients. The rest was fairly simple. I recommend ripe or over ripe bananas. You'll want to make extra!
