Ingredients

  • 4 cups romaine lettuce chopped
  • 1 can red beans rinsed
  • 1 cup corn grain
  • 1 cup cherry tomatoes
  • 1 carrot grated
  • 1 cup mushrooms sliced
  • 1 cup cheese grated
  • ½ cup sour cream
  • 1 cup salsa
  • salt and pepper
  • fresh coriander

Instructions

  • Place the chopped romaine lettuce in a bowl.
  • On top add red beans, corn, tomatoes, carrot, mushroom, and cheese.
  • Serve with sour cream and salsa. Sprinkle with fresh coriander.
