    Vegan Chocolate Chip Cheesecake-Stuffed Strawberries

    Yes, these Vegan Chocolate Chip Cheesecake-Stuffed Strawberries are healthy. So healthy you can eat them for breakfast. And they're vegan! They're indulgent (did we mention they taste like cheesecake?!), but the protein from the cashews in the recipe helps keep you full. They make a great summertime dessert—if you're serving them to a crowd, cut the tips off the strawberries and stand them on a platter!

    Ingredients

    • ¾ cup raw whole cashews soaked in water overnight (8 hours)
    • 2 –3 tbsp water
    • 1 tbsp coconut oil
    • 2 tbsp lemon juice
    • 1 tbsp Grade B maple syrup or raw agave nectar if you're following a strict raw diet
    • 1 tbsp cacao nibs or chopped dark chocolate
    • 1 lb strawberries hulled
    • 1 tbsp ground flaxseed
    • 1 tsp ground cinnamon

    Instructions

    • Combine cashews, 2 tablespoons of water, coconut oil, lemon juice, and maple syrup in blender or food processor.
    • Blend until smooth, scraping sides of blender if necessary. If mixture is too thick or the blade of the blender gets stuck, add an additional tablespoon of water.
    • Fold in cacao nibs or chocolate chips.
    • Place mixture in bowl, cover, and refrigerate until firm, 2–3 hours.
    • Combine flaxseed and cinnamon in a small bowl.
    • Use a spoon to fill each strawberry with cashew cheesecake mixture.
    • Sprinkle tops with flaxseed mixture and serve.

    Notes

    You can add an extra tablespoon of maple syrup if you'd like the cheesecake to be sweeter. Prep time includes time spent chilling in fridge.
    If you want to serve the strawberries upright on a platter, slice off the tips of each strawberry; you can fill them with a little more cheesecake if you're standing them up.

        You can! You'd have to double or triple the filling and to get it to set, you'll want to pop it in the freezer for a bit (because the filling would be too creamy to slice through otherwise). 🙂

      I would have justified regular cheesecake stuffed strawberries as being healthy because they amount of berry is greater than the amount of cheesecake, but I love that yours are legit healthy! And I'm so curious to hear more about your cleanse this week!

      Wow! Bookmarking this for when strawberry season arrives in Sweden. Which won't be for a while yet because we've still got freaking ice on the ground. Argh! But when they do arrive, it'll be worth the wait. Swedish strawberries are bonkers awesome, so this will be the perfect thing to do with them. Great idea!

        I found a local farm that grows hot house strawberries! They are so sweet and absolutely perfect. 🙂 In a few weeks, the farmers market will be full of them, though. I can't wait!

      How adorable! I've tried cashew based cheesecakes and while I love the texture, I still wouldn't say that they taste like real cheesecake. But maybe because it's too hard not to compare a slice of cake to traditional cheesecake...whereas stuffing the mixture into a strawberry instead would give you a different type of experience and really highlight the cheesecake flavour! Great idea for something different to do with cashew cream, and I love how you created your own "graham cracker crumbs" too!

        Yeah, I haven't had cashew cheesecake in actual cheesecake form, so maybe it's different then. I kind of want to try that, but then I also feel like an entire slice would be WAY too much for me. 🙂

      It's crazy how similar you can make cashews taste just like cheesecake I can't do nuts anymore because of my nut allergy - gah! These just looks amazing though - but I'm using cream cheese.
