This cheesy sweet potato noodles recipe with black beans and spinach is guaranteed to become a favorite! It’s entirely vegan, dairy-free and great as either a main course or a side dish that’s ready in 15 minutes.
What I love about sweet potato is just how versatile it is. You can use it in sweet and savory recipes alike, add it to salads, and so much more. But one of my favourite things to do is turning it into noodles! It may sound unusual if you haven’t tried it before, but trust me - sweet potato noodles are a game changes.
The sweet potato noodles recipe I’m sharing today is one of my current go-tos. It’s a great way to get dinner on the table in 15 minutes. And not just any dinner. This one’s cheesy, comforting, and so perfectly delicious that no one will believe it’s 100% vegan.
A lot of us have probably tried zoodles before. But the great thing about spiralised sweet potato is just how crispy and crunchy it gets. Together with a dairy-free cheesy sauce, it makes for a phenomenal side dish or main course. The addition of black beans adds a great texture, while spinach and scallions bring in freshness and greenery!
Instructions for this sweet potato noodles recipe
You want to start by heating some olive oil in a frying pan. Next, add the spiralised sweet potato and fry for around 5 minutes, tossing frequently, until starting to brown.
Meanwhile, make the cheesy sauce. Melt vegan butter in a saucepan over a medium heat and add an onion, garlic, salt, pepper, paprika, cumin and onion powder. Cook for 5 minutes, until softened and fragrant.
Now add flour and stir together, before gradually adding in plant based milk and whisking until the sauce thickens before adding more.
When all of the milk had been added, add grated vegan cheese and stir once again until the cheese melts.
Now add a can of drained and rinsed black beans to the noodles together with the sauce, followed by spinach and scallions. Serve when the spinach wilts.
Tips and substitutions
- This recipe also works with spiralized zucchini.
- Feel free to add any other vegetables of your choice.
- Instead of the grated vegan cheese, you can use nutritional yeast.
- You can add any other beans or pulses of your choice instead of the black beans.
- Serve these sweet potato noodles by themselves, or as a side dish.
