I love the delicious combination of apple and dates in this recipe! These Date and Apple Muffins are very nourishing—both healthy and tender.

Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 egg
- ¼ cup honey
- ½ cup apple sauce
- ½ cup milk
- ¼ cup vegetable oil
- 1 tsp vanilla extract
- 1 cup chopped dates
Instructions
- In a large bowl, combine flour, baking powder, baking soda, and salt. In another bowl, whisk together egg, honey, apple sauce, milk, oil, and vanilla. Add the wet mixture to the dry ingredients and mix until well combined.
- Add dates and mix a little. Divide the dough into oiled or papered muffin cups.
- Bake in the center of the oven preheated to 375°F for 20 minutes.
- Remove muffins from the oven and let them cool.

I made these this morning in a silicone muffin pan and they came out beautifully. I think nuts would make a nice addition. I unfortunately only had medjool dates with the pits, so cutting, removing pits and dicing dates was a bit of a pain, and I would buy already chopped dates next time. Plus the dates were so sticky and clumpy that I added them to the flour, mixing well to separate and lighten BEFORE I added the wet ingredients. This worked a charm. Filled the cups to the top and baked for exactly 20 minutes as directed. Delicious! I am making another batch to share with work colleagues.
