    How to Make Buffalo Cauliflower Tacos

    1. In a bowl, mix flour, almond milk, garlic, salt, and paprika. Toss cauliflower to coat.
    2. Spread cauliflower out on a baking sheet, and bake until crispy.
    3. Mix the homemade buffalo sauce.
    4. Toss cauliflower in buffalo sauce, then bake for a few more minutes. 
    5. Serve buffalo cauliflower in tortillas or flatbread with your choice of toppings.

    Spread Cauliflower Evenly

    Make sure that you bake the cauliflower in a single layer on the baking tray. This will ensure that the cauliflower cooks evenly. 

    Stir Halfway Through Baking 

    Make sure to flip the cauliflower over halfway through cooking, so they can get crispy on both sides!

    Cooking Time

    Depending on the size of your cauliflower pieces, the cooking time can vary a bit. So adjust the baking time as needed. You want the outside of the cauliflower to be crispy with a fork tender center.

    Change Up the Seasonings 

    Feel free to add in a little premade taco seasoning or Cajun seasoning for added flavor. I used a mixture of salt, paprika, and garlic salt, but you can use your own favorite spices to add all sorts of new flavors to this recipe.

    Adjust the Spice Level

    Everyone has a different spice preference, so be sure to adjust to your own liking. For a more mild flavor, you can reduce the amount of hot sauce or you can choose a more mild brand. I used Frank's Hot Buffalo sauce, but you can use any brand you prefer. 

    Mix up the Toppings

    I kept the toppings relatively simple, but you can get as creative as you want. Some great vegetarian taco toppings are:

    • Salad Greens
    • Vegan Ranch or Blue Cheese Dressing (like this one!)
    • Roasted Veggies - like zucchini, mushrooms, and onions.
    • Fried Peppers and Onions
    • Any fresh herbs you like!

    Why do you warm up tortillas for tacos? 

    Warming up the tortillas makes them softer and more flexible. It also gives the tortillas more flavor! You don't have to warm up your tortillas, but you probably won't go back once you try it.

    Do these tacos make good leftovers?

    Yes. I recommend storing each taco component, including your buffalo cauliflower, in its own container so the tacos don't get soggy. They will stay good for 3-4 days.

    Reheat the buffalo cauliflower bites in the oven - they will get limp in the microwave. Then assemble the tacos when you're ready to eat.

    How do you reheat the buffalo cauliflower bites? 

    Spread the leftover cauliflower bits on a baking sheet and cover with foil. This helps keep them from drying out in the oven. Bake at 350 for 5-10 minutes, or until heated through.

    Ingredients

    • ½ cup all-purpose flour
    • 1 tsp garlic powder
    • ½ tsp salt
    • ½ tsp paprika
    • ½ cup plain almond milk
    • 1 head cauliflower chopped into florets
    • ½ cup hot sauce such as Frank’s buffalo sauce
    • 1 tbsp canola oil or your oil of choice
    • 1 tbsp maple syrup or agave syrup
    • 6 small flatbreads or tortillas

    Toppings (choose your favorites)

    • 1 cup lettuce such as romaine; chopped
    • ½ red onion sliced
    • ½ cup vegan sour cream or plain nondairy yogurt
    • cilantro optional

    Instructions

    • Preheat the oven to 425°F, and line a baking sheet with parchment paper.
    • In a large bowl, mix together the flour, garlic powder, salt, and paprika until well combined.

    • Then add the cauliflower florets and toss until they are evenly coated.

    • Spread cauliflower out on the prepared baking sheet and bake for 20 minutes, gently stirring halfway through, or until fork tender.

    • While cauliflower is cooking, mix together the hot sauce, oil, and maple syrup in a small bowl. Set aside.

    • Once cauliflower is cooked, transfer it to a large mixing bowl and toss with the prepared hot sauce
