Monday

Spicy Cauliflower Frittata // This flavor-packed frittata made with harissa roasted cauliflower and halloumi cheese can be on the table in just over a half hour.
Thursday
Duxelles Grilled Cheese // This grilled cheese is the perfect sandwich for any mushroom lover.
Friday
Spicy Chickpea & Spinach Stew // This spicy stew comes together in minutes and is the perfect meal to warm you up on cold winter evenings.

Tips for This Week’s Vegetarian Meal Plan
- The caramelized onions for Tuesday's quesadillas require a bit of cook time, but most of it is hands off. To save more time, you can even make the caramelized onions a day or two ahead.
- Wednesday's frittata and Friday's stew both call for harissa - a spicy Moroccan pepper sauce. Look for it in your supermarket's international section.
- Friday's stew can be served over rice or couscous. We put rice on the list, since you can use that for Monday's soup as well. If you prefer couscous, add it to the list.
