Ingredients
Maple Syrup Vegetable Bites
- ½ rutabaga
- 2 potatoes
- 1 onion finely chopped
- 3 tbsp maple syrup
- salt and pepper to taste
Carrot, Parsnip, and Oregano Vegetable Bites
- 2 carrots
- 2 parsnips
- 1 potato
- 1 tsp dried oregano
- salt and pepper to taste
Sweet Potato Vegetable Bites
- 2 large sweet potatoes
- ¼ cup fresh parsley
- 1 tsp ground coriander
- salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Grate vegetables using a food processor or grater.
- Remove all water.
- Mix vegetables with the other ingredients.
- Divide the mixture into four equal portions and put them into muffin tins.
- Bake and cook for 25 minutes.
- Serve with sour cream.
