Sweet Potato Vegetable Bites

large sweet potatoes

fresh parsley

ground coriander

Instructions
Preheat oven to 400°F.
Grate vegetables using a food processor or grater.
Remove all water.
Mix vegetables with the other ingredients.
Divide the mixture into four equal portions and put them into muffin tins.
Bake and cook for 25 minutes.
Serve with sour cream.
