    Vegan Vegetable Bites

    These three combinations of Vegan Vegetable Bites recipe are super simple and super tasty. Serve the bites with sour cream for breakfast or a healthy snack.

    Ingredients

    Maple Syrup Vegetable Bites

    • ½ rutabaga
    • 2 potatoes
    • 1 onion finely chopped
    • 3 tbsp maple syrup
    • salt and pepper to taste

    Carrot, Parsnip, and Oregano Vegetable Bites  

    • 2 carrots
    • 2 parsnips
    • 1 potato
    • 1 tsp oregano
    • salt and pepper to taste

    Sweet Potato Vegetable Bites

    • 2 large sweet potatoes
    • ¼ cup fresh parsley
    • 1 tsp ground coriander
    • salt and pepper to taste

    Instructions

    • Preheat oven to 400°F.
    • Grate vegetables using a food processor or grater.
    • Remove all water.
    • Mix vegetables with the other ingredients.
    • Divide the mixture into four equal portions and put them into muffin tins.
    • Bake and cook for 25 minutes.
    • Serve with sour cream.

      No eggs or flour? Do they stick together, or fall apart with the first dig of a fork?
