It's time for another Sweet Adventures blog hop, and this months theme is nuts. I'm nuts about nuts, but I usually only eat them in their natural form, especially in salads, or simply by the handful. So I wasn't quite sure what nut based sweet I'd make for this months theme. I tossed up several ideas, when I spied a bag of pistachios in my pantry cupboard that I'd bought to use for something else and had promptly forgotten about, so I decided on Pistachio Cookies.
These Pistachio cookies are decidedly addictive, and are somewhat similar to the Strawberry Ricciarelli I posted last week, although chewier. I love recipes that are quick and easy to make, and this is definitely one of those recipes. All you need is about 10 minutes, plus 12 minutes baking time, and you have a batch of delicious homemade cookies. Why would you buy cookies, especially those that are full of artificial ingredients, when they are so simple to make at home?
Serve with a cup of tea or coffee, but be warned, it will be difficult to stop at one.
📖 Recipe
Ingredients
- 150 g pistachios
- 165 g caster sugar
- 50 g plain flour
- 3 egg whites
- 1 tbs icing sugar
Instructions
- Preheat the oven to 160 Celsius (320 Fahrenheit) and line two baking trays with baking paper.
- Place 115g of the pistachios in the bowl of a food processor and process until finely ground. Just keep an eye on it as you process it to make sure you don't turn it into pistachio butter.
- Place the ground pistachios and 55g of the caster sugar and the flour in a bowl and stir to combine.
- Place the egg whites into the bowl of an electric mixer and whisk until soft peaks form. Add the remaining caster sugar gradually and then fold the egg whites into the pistachio mixture and fold through until well combine. Place heaped teaspoons on the baking trays. Chop the remaining pistachios and sprinkle over the top of the cookies.
- Bake for 12 minutes or until lightly golden and transfer to a wire rack to cool. Dust with icing sugar to serve.

As Jennifer's Fiance and Delicious Everyday's official taste tester, I have to re-emphasise how difficult it is to stop at one of these amazingly delicious cookies. If it wasn't for the fact that I was only allowed one cookie prior to the photos being taken, this post may never have gone public!

Hehe I didn't know you liked them that much. They are now ready for you to devour when you get home 😀

I adore pistachio too, I haven't done a cookie recipe yet (they rarely last long enough to cook with). I think I will give these a try. I have to get back to baking this week since kinder and mothers group start again this week.

They're so dainty looking I think you'd be excused for eating quite a few. Isn't it funny the inspiration that comes from our pantries? I'm glad I'm not the only one who buys things for special recipes and forgets about them (mustn't have been that special!).

I happened to have a couple of egg whites in the fridge and a bag of blanched almonds in the cupboard, so have just whipped these up. What yummy, chewy, nutty goodness! Will have to try again with pistachios another time.

I 100% agree, why would you ever buy biscuits from a shop when you can make such incredible ones at home. I'm on a real pistachio kick at the moment so will definitely be making these!

I agree with you about why people would ever bother to buy cookies from a store when they are so ridiculously easy to make at home. These look lovely and are a nice treat from the usual butter cookies I find myself making in a pinch. I am a huge fan of pistachios, did you know they are technically a fruit? ps - I love the comment from your OH. Made me giggle.

I'm going try these with gluten free flours. They look lovely

I have a friend who loves pistachio, in just anything. Especially Pistachio ice-cream. I can't wait to bake some cookies and try this out. I usually love eating pistachio on it's own as a nut.. LOL.. I guess I can be a little nutty too :P. Have a good week!! Cheers, Jo

There is no butter or oil used ? Does the cookies spread a lot ? I am sorry for throwing all these questions at ya. Arvind loves pistachio and I am sure these cookies would make him very happy 🙂
Jennifer says
Hi Kankana,Always happy to answer any questions 😀 No, no oil or butter is used, which is great isn't it 😀 The cookies spread a little but not a whole lot, as long as the egg whites are whipped properly. Just make sure the egg whites are whipped to soft peaks before adding the sugar and that it then forms thick ribbons after adding the sugar and don't add more than a heaped teaspoon onto the tray when baking otherwise they do spread more 🙂 These cookies were certainly very popular with my fiance so I am sure they would make Arvind happy 😀

Thanks dear 🙂 I am saving it to give a try!

We always have pistachios at home because my husband loves eating them. I thought your fiance is really cute leaving a comment (I just noticed it and had to comment about it. =P). I trust him, these must be scrumptious! He's a lucky guy! If you need a taster tester #2, let me know. I'll be right there! (I WISH!!).
