Cocoa Cake

  • 2 cups flour
  • ½ cup cocoa
  • ¼ cup sugar
  • ½ tsp salt
  • 1 tbsp baking powder
  • 6 eggs
  • ½ cup unsalted butter
  • 3 tbsp coconut oil
  • ¾ cup milk
  • 1 tsp vanilla extract

  • 3 cups heavy cream
  • ¼ cup sugar
  • 1 tsp vanilla extract

  • 1 tbsp vodka
  • ¼ cup water
  • 2 cup frozen cherries

  • 1 cup fresh cherries
  • ¼ cup dark chocolate, grated

  1. Preheat the oven to 350˚F.
  2. Mix the dry ingredients of the cake together.
  3. With a mixer, mix the eggs until the mixture whitens a little, about 2 to 3 minutes.
  4. Melt the butter and coconut oil together. Let it cool a little and slowly add it to the eggs. Mix for 2 to 3 minutes until you have a shiny and glossy texture.
  5. Add the dry ingredients slowly, along with the almond milk.
  6. Mix until thick.
  7. Spread the cake with a spatula in a hinged 12″ mold with parchment paper at the bottom.
  8. Bake for 45 minutes.
  9. In the meantime, use a mixture to whip the icing ingredients together. Make a very firm whipped cream.
  10. Heat the water for the syrup and add the cherries and vodka. Simmer for 10 minutes until cherries are soft. Let it cool.
  11. To assemble the cake, the cake must be cold to handle. Cut it into small cubes.
  12. Place cake cubes at the bottom of the glass.
  13. Put about 1/4 cup of whipped cream on the cake.
  14. Pour syrup on top of the whipped cream.
  15. Take more cake cubes and place on top of the cherry syrup.
  16. Put the remaining whipped cream on top.
  17. Grate dark chocolate over the top and garnish with cherries.

Sunday was my birthday, and because I was traveling all day, it went by so fast. This year I didn t feel very festive As my friend Brittany said, I am now a quarter of a century old! I don t really like the sound of that ahhh! Since I didn t get to make myself a birthday cake this year, I made this Black Forest cake (Schwarzwalder Kirschtorte in German), in a glass, because this is one of my favorite cakes and I didn t want to make an entire cake for myself since nobody is around this week to help me eat it! Last year I made Nutella Whoopie Pies, so I wanted to continue the tradition. This is a great dessert recipe for one, or two. I always use Morello cherries from Trader Joes, they are so delicious! The kirschwasser is usually a must when preparing a Black Forest cake, but if you don t have it you can leave it out and it will still taste delicious!
