There are few things that roasting does not make better, and more delicious.
Roasted potatoes are an old, and perhaps obvious favourite. In fact most vegetables are amazing roasted, and so are most fruits. These Bay, Thyme and Honey Roasted Pears are a perfect example.
Not only does roasting produce amazing flavours, it is low effort too. Especially with this dish. Simply toss everything together and let the oven do the hard work.
The end result is pears that are perfectly soft and aromatic, without being overly sweet. I went for a ratio of ¼ cup of honey to ½ cup water, but if you like things a bit sweeter you can certainly use more honey. The bay leaves (I only had dried, but fresh would be wonderful) and thyme add an extra and slightly unexpected element.
These Bay, Thyme and Honey Roasted Pears are infinitely versatile too. Serve them with a dollop of cream for a simple dessert or on top of granola or porridge for breakfast. I like them with with a dollop of whipped coconut milk and a spoonful of granola or toasted nuts for a little bit of crunch.

Ingredients
- 3 pears peeled and cored
- ¼ cup honey
- ½ cup hot water
- 3 leaves bay
- 3 thyme sprigs
Instructions
- Preheat the oven to 180 celsius (350 fahrenheit). Add the honey to the hot water and stir well to combine.
- Place the pears in a baking dish and scatter with the bay leaves and thyme sprigs. Cover with the honey water and bake for 30 to 40 minutes, turning the pears every 10 minutes.
