Ingredients for a Vegan Stir-Fry
I love stir-frys because they’re so versatile. You can make one out of virtually anything you have in your pantry or fridge, but there are a few essentials that I recommend keeping stocked to make the perfect vegan stir-fry!
Gardein™ Seven Grain Crispy Tenders.
I always have at least a couple bags of this goodness in my fridge.
If you’re not familiar with Gardein, you should be! They make a whole lineup of delicious vegan-friendly foods. These plant-based products are made from soy, wheat and pea proteins, and ancient grains.
These Seven Grain Crispy Tenders are great for all kinds of recipes – I’ve used them to make vegan chicken salad, vegan tacos, and even to top a hearty salad. They’re super versatile and were the perfect match for my vegan stir-fry!
Earth Balance® Organic Whipped Buttery Spread.
I nearly always have a tub of this in my fridge. I love the light and airy texture. It’s easy to spread when topping things like toast and bagels.
And it melts! It can be so hard to find a vegan-friendly product that actually melts properly. Plus, it’s gluten-free, vegan, lactose-free, contains no MSG, is non-GMO, and is certified organic.

For my vegan stir-fry, I used bell peppers, onions, mushrooms, carrots, and snap peas. Yum! Feel free to experiment with your own favorite combination of veggies.
Stir-Fry Sauce.
Obviously, it’s not a stir-fry without stir-fry sauce. You can certainly use a store-bought variety to make this recipe even quicker.
I went ahead and made my very own homemade vegan stir-fry sauce with just a few simple ingredients that I had on hand. The whole thing took 60 seconds – if that! It was definitely worth the effort.
All you need to pull this sauce together is soy sauce, sesame oil, rice vinegar, a bit of ginger or ginger paste, and some red chili flakes. So simple!

How to Make a Vegan Stir-Fry
You won’t believe how quick and easy it is to make this vegan stir-fry!
The first thing you’ll want to do, is get those Gardein Seven Grain Crispy Tenders into the oven. It only takes about 15 minutes to bake them to perfection, so you can get started on the rest of the recipe while they cook.
Then, you can prepare the vegan stir-fry sauce. In a small bowl, you’ll whisk together soy sauce, sesame oil, rice vinegar, ginger paste, and red chili flakes. How easy is that?
Next, chop all your veggies into bite sized pieces and heat a bit of the Earth Balance Whipped Buttery Spread in a large wok.
When it’s nice and hot, go ahead and add your veggies and stir-fry for 4-5 minutes until the veggies are just beginning to soften.
Around this time, your Crispy Tenders will be ready. Remove them from the oven and toss them into the wok along with the stir-fry sauce.
Mix everything together until the veggies and tenders are well coated in the sauce, and cook for another 2-3 minutes.
Finally, prepare the riced cauliflower according to the package directions – it takes just a few minutes in the microwave.
Place a generous scoop of riced cauliflower on each serving plate, and top with the vegan stir-fry.
Dig in!

Ingredients
- 1 9 oz package Gardein™ Seven Grain Crispy Tenders
- 2 10 oz packages Birds Eye® Steamfresh® Veggie Made™ Original Riced Cauliflower
- 2 tbsp Earth Balance® Organic Whipped Buttery Spread.
- 1 red bell pepper chopped into bite sized pieces
- 1 green bell pepper chopped into bit sized pieces
- 1 yellow onion peeled and thinly sliced
- 1 cup mushrooms sliced
- ½ cup snap peas
- 1 cup soy sauce, gluten-free variety if needed
- 3 tbsp rice vinegar
- ¼ cup sesame oil
- ¼ cup brown sugar
- 1 tbsp red chili flakes
Instructions
- Preheat oven to 375 degrees Fahrenheit. Spread Crispy Tenders in a single layer on a baking sheet, and bake for 12-15 minutes until heated through. When cooked, remove from oven and set aside.
- Prepare the stir-fry sauce. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, brown sugar, and red chili flakes. Set aside.
- Heat the Earth Balance spread in a large wok over medium-high heat. Add all of the veggies and stir-fry for 5-6 minutes until softened.
- Add the Crispy Tenders and stir-fry sauce. Stir and cook for additional 2-3 minutes.
- Prepare the riced cauliflower in the microwave, according to the package directions.
- Serve the stir-fry over top of the riced cauliflower.
