A creamy, tofu-based vegan quiche with no eggs or dairy. Use this easy, adaptable formula as a base and customize it with your favorite veggies, vegan cheese and seasonings.
½teaspoonKala Namak, (black salt), or regular salt, to taste

1cupbaby spinach, packed
½cupvegan cheese, shredded (vegan cheddar works well)
Instructions
Preheat the oven to 375°F (190°C). If your pie crust isn't already in a pan, fit it into a 9-inch pie dish.
Drain the tofu and gently press out the excess water with a clean kitchen towel. Break it into a few large chunks and place them in a food processor or high-speed blender.
Add the nutritional yeast, turmeric and kala namak (or regular salt). Blend until smooth, scraping down the sides as needed. If the mixture is too thick to blend, add a splash of water or plant-based milk. Taste and adjust the seasoning.
If using, add the baby spinach and vegan cheese shreds and pulse briefly to incorporate them without fully pureeing.
Pour the filling into the pie crust and smooth the top with a spatula. Bake for about 35 minutes, until the top begins to brown and the filling is firm. If the crust edges brown too quickly, cover them with foil.
Let the quiche cool for at least 15 minutes before slicing so the filling can set. Serve warm or at room temperature. I like mine with salsa or hot sauce!
Notes
