Vegan Blueberry Cobbler

This vegan blueberry cobbler is the ultimate summer dessert! Fresh, juicy blueberries with a crunchy biscuit topping - just irresistible!

Ingredients

4 cups blueberries, washed and dried
¼ cup sugar
1 tablespoon cornstarch
1 tablespoons lemon juice
1 ¼ cups flour
¾ cup sugar
1 teaspoon baking powder
½ teaspoon salt
⅔ cup melted vegan butter
3 tablespoons almond milk

Instructions

Preheat oven to 375 F
In a large bowl, combine blueberries, sugar, cornstarch, lemon juice
Pour into a lightly greased 2 quart casserole dish
In a separate bowl, stir together the flour, sugar, baking powder and salt,
Then mix in the vegan butter and almond milk until a thick batter is formed
Drop the batter in large scoops on the surface of the cobbler,
Bake in the preheated oven for 45-55 minutes, or until the filling is bubbly and the topping is golden
Allow to cool at least 10 minutes before serving
