Light, tender cornbread pancakes made with fine cornmeal, white whole wheat flour and a touch of honey. They taste just like a warm honey cornbread muffin, in pancake form.
In a large bowl, whisk together the white whole wheat flour, cornmeal, baking powder, baking soda and salt.
In a medium bowl, whisk the egg, almond milk, melted coconut oil, vanilla extract, almond extract and honey until smooth.
Pour the wet ingredients into the dry ingredients and stir just until no dry streaks remain. The batter should still be a little lumpy. Let it rest for 5 minutes while you heat the pan.
Heat a large nonstick skillet or griddle over medium-low heat and lightly grease it with oil or cooking spray.
Give the batter a quick stir, then pour about ¼ cup per pancake into the skillet, leaving room for them to spread. Cook for 2 to 3 minutes, until small bubbles form on top and the edges look set.
Flip and cook for 1 to 2 minutes more, until golden brown and cooked through. Repeat with the remaining batter, keeping finished pancakes warm in a 200°F (95°C) oven. Serve with your favorite toppings.
Notes
Cook time: the times assume a skillet that fits 3 pancakes at once. On a large griddle the whole batch goes much faster.Keep them warm: hold finished pancakes on a baking sheet in a 200°F (95°C) oven while you cook the rest.Vegan version: use a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, rested 5 minutes) and swap the honey for maple syrup.Storage: refrigerate cooled pancakes for up to 4 days or freeze for up to 3 months. Reheat in the toaster or a 350°F (175°C) oven.
