Learn how to roast pistachios in the oven, with 7 easy flavors from classic salted to honey roasted, chili, curry, rosemary, BBQ, and sweet & savory. A crunchy, healthy snack ready in under 20 minutes.
Spread the pistachios on a baking sheet in a single layer.
For Honey Roasted Pistachios only: Melt the butter in a small microwave-safe bowl, then stir in the honey and salt. Drizzle over the pistachios and toss to coat. Skip the olive oil for this flavor.
For all other flavors: Drizzle the pistachios with the olive oil, sprinkle with the seasonings for your flavor of choice, and toss until evenly coated.
Roast for 10–12 minutes, tossing halfway through, until fragrant and a shade darker. Start checking at 8 minutes, especially for the sweet flavors, which brown faster.
Spread the roasted nuts on a sheet of parchment paper and let them cool completely, at least 1 hour, so they crisp up and any coating sets. Store in an airtight container for 3–5 days.
Notes
Choose one flavor per batch. Each flavor group seasons the full 2 cups of pistachios. Nutrition is calculated for the Original Salted version, per ¼ cup.Vegan honey roasted: use maple syrup or agave in place of honey, and vegan butter or coconut oil in place of butter.In-shell pistachios: roast at the same temperature for 12–15 minutes. Seasonings mostly stay on the shell, so shell them first for the strongest flavor.Air fryer: cook at 350°F for 5–7 minutes, shaking the basket halfway.
