Buttery slice-and-bake shortbread cookies scented with cardamom and lemon zest and studded with chopped pistachios. They're perfect for dunking in tea, coffee or milk, and fancy enough for a holiday cookie tray.
Add the flour, salt, confectioners' sugar, lemon zest, ground cardamom and softened butter to the bowl of a food processor. Pulse until the mixture comes together into a soft dough.
Add the chopped pistachios and pulse a few more times, just until they are evenly mixed through the dough.
Turn the dough out onto a work surface and roll it into a log about 6 cm (2½ inches) in diameter. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes, or overnight, until firm. This also gives the cardamom and lemon zest time to infuse.
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Unwrap the log and use a sharp knife to slice it into 24 rounds, about 1 cm (⅜ inch) thick, turning the log as you go so it stays round. Arrange on the baking sheet about 1 inch apart.
Bake for 10 to 12 minutes, until the edges are just beginning to turn golden.
Let the cookies cool on the baking sheet for 5 minutes (they are fragile while warm), then transfer to a wire rack to cool completely.
Notes
These cookies taste best the day after baking, once the cardamom and lemon flavors have fully developed. You can also refrigerate the wrapped dough log overnight before slicing and baking. To make them vegan, use firm vegan butter sticks instead of dairy butter. The dough log can be frozen for up to 3 months; let it sit at room temperature for about 10 minutes before slicing and add 1 to 2 minutes to the baking time.
