Soft, cakey apple cinnamon quinoa oatmeal cookies made with cooked quinoa, old-fashioned oats, and diced fresh apple, finished with a drizzle of honey.
Preheat the oven to 375°F. Line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon. Set aside.
In a large bowl, cream the butter, sugars, and honey with a hand mixer until light and fluffy, about 3 minutes. Beat in the eggs and vanilla and continue beating for 2 minutes. Add the flour mixture and beat just until combined.
Fold in the cooled quinoa, oats, and diced apple by hand, mixing just until evenly distributed.
Drop heaping tablespoon-sized balls of dough onto the prepared baking sheets, spaced about 1 inch apart. Bake until golden brown, 12 to 15 minutes. Cool on the pan for a couple of minutes, then transfer to a wire rack to cool completely.
Drizzle with a little honey just before serving, if desired.
