Every Saturday, we highlight some of our favorite submissions from Potluck. Here are this week’s picks:

Berry & Kale Smoothie // This wrinkle fighting smoothie is packed with skin-friendly ingredients like flax, blueberries, and fresh orange juice. Get the recipe from Henry Happened →

Roasted Cauliflower Salad with Feta, Capers, Red Bell Pepper & Green Onion // Forget the potato salad and coleslaw sides, I’m making this for Memorial Day! Get the recipe from Kalyn’s Kitchen →

Broccoli, Brown Rice, and Chickpea Bowl // Although this recipe uses roasted broccoli, it’s a great way to use up any spare vegetables you have sitting in the crisper drawer! Get the recipe from An Avocado a Day →

Dark Chocolate Raspberry Black Bean Brownies // I’ve yet to try black bean brownies, but this recipe just might be the push I need to do it. Get the recipe from Hummusapien →

Asian Garlic Tofu with Rice // I love this recipe because it is so, so simple! That’s my favorite kind of weeknight dinner. Get the recipe from The Garden Grazer →

Mexican Cauliflower Casserole // Creative cauliflower recipes are definitely a thing right now and this cheesy Mexican casserole is a perfect example of why I’m loving this trend. Get the recipe from The Low Carb Diet →

Yummy! Lots of goodies! I wanna give these a try, but they may have to wait….my coach has a theory that my stomach upsetting on every workout is because I am eating too many vegetables….how is that possible?! :p Either way, I have to cut back until my race next weekend or my 1:13 goal will slip away 🙁 Have a wonderful Saturday!

Thanks so much for including my Roasted Cauliflower Salad in this week’s picks. Even though I’m a huge cauliflower fan, truthfully I was blown away by how good this was! (Two words: Feta Cheese!)
